Toasted Coconut Baked Donut Recipe

Soft, cake-like coconut donuts are topped with a coconut glaze and toasted coconut! This baked donut recipe is the best!

Ingredients

  • 2 cups of cake flour
  • ¾ cup of​ sugar
  • 2 teaspoons​s baking powder
  • 1 teaspoon salt
  • ½ cup buttermilk
  • ¼ cup cream of coconut
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 tablespoons melted butter
  • Glaze
  • 1 cups powdered sugar
  • 1/4 cup coconut milk, sweetened
  • 1 ½ cup toasted coconut

Instructions

  1. Prheat oven to 425 degrees. Spray 2 6-cavity donut pans with non-stick spray and set aside.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. In a seperate bowl, whisk together the coconut milk, cream of coconut, eggs, and vanilla. Whisk until combined.
  4. Pour wet ingredients into the dry ingredients, followed by the melted butter. Stir until combined.
  5. Pour batter into a large zip top bag. Snip one corner and fill the donut cavities 2/3 full. Bake donuts for 7-9 minutes or until donuts spring back when touched.
  6. Allow donuts to rest in the pan for 3 minutes before removing to a cooling rack. While donuts cool, prepare the glaze.
  7. In a bowl, whisk together the powdered sugar and coconut milk. Dip the tops of the donuts into the glaze, then dip the glazed tops into the toasted coconut. Place donuts on wax paper to set.
