The first time I had pimento cheese was during a vacation with friends at Wilmington, North Carolina. We stopped to eat lunch at a restaurant, called Dockside. It is exactly as the name describes, a restaurant situated adjacent to a boat harbor.

I love the tangy flavor of white cheddar and the Monterey Jack cheese is there to take the flavor, you use a combo of white and regular cheddar or mix in pepper Jack, provolone or mozzarella.
I can find diced pimentos in the canned veggie aisle. If you are struggling to find them, finely diced roasted red peppers or even fresh red peppers can be used instead,
Feel free to add some heat by adding happed jalapeno peppers, green chilies or cayenne pepper!
Can You Freeze Pimento Cheese?
Yes, but you cannot serve it as a dip once it has thawed because the oil in the mayo will break down. However, you CAN stir into recipes like mac and cheese!
