If you plan on doing some Black Friday shopping then a pot of soup is the perfect thing to come home to. I am not a big Black Friday shopper. I contemplate it every year, however. I look through all the circulars, heck I have even started internet searches for early Black Friday announcements. There’s nothing I love more than getting a good deal.
In my mind, I’m going to be one of those people who gets up in the wee hours, and with an extra large cup of coffee in hand, leaves to tackle the stores. But when Thanksgiving night comes around, and my belly is full and happy, I know that there is no possible way I am going to be getting up early. Deals be damned, I am sleeping in! After cooking Cajun Turkey, easy Cornbread Stuffing, cheesy mashed potatoes , the fixins and the dessert, I NEED my beauty rest.
The day before Thanksgiving is really where all the deals happen. I love that day. I sit in my yoga pants, eat all the snacks I want, and order all my gifts. That is how I knock out all my Christmas shopping in one day. It is awesome. This leaves Black Friday as the day I can experiment with new ways to use up all those leftovers!
Leftover Turkey Soup Recipe
If you like chicken soup, then turkey soup is a no-brainer. Using leftover turkey makes it so much easier too. This turkey soup recipe uses frozen veggies AND fresh green beans. But honestly, any veggies you have on hand will do-especially leftover veggies! I use a hefty amount of chicken broth but you need it as you will also add gnocchi (as the dumplings)! The gnocchis plump up and absorb the flavor from the broth and the turkey.
This turkey soup is good all year long. It is hearty, satisfying and so, so easy!
Turkey Soup Recipe with Dumplings
This turkey soup recipe is so easy especially as it uses leftover turkey!
Fill this soup with your favorite veggies and add frozen gnocchi as the dumplings!
Ingredients
- 1 teaspoon olive oil
- ⅓ cup mixed frozen veggies (carrots, onions, green peppers)
- 2 cloves minced garlic
- 1 tablespoon chopped fresh thyme
- ¼ teaspoon salt
- 3 32 oz containers chicken broth
- 2 cups leftover turkey
- 1 cup leftover green beans, chopped
- 1 cup leftover corn
- 1 24 oz bag frozen gnocchi
Instructions
Heat oil in a large stockpot over medium heat. Add mixed vegetables and cook until softened. Stir in garlic. Add fresh thyme and salt; stir. Add chicken broth, turkey, green beans, and corn. Allow mixture to come to a boil and add gnocchi. Cook an additional 5 minutes or until gnocchi have fully cooked.
