These strawberry lemon rickey drinks are a perfect mocktail that the whole family can enjoy.
They taste like a fizzy strawberry lemonade smoothie but they’re made with fresh ingredients and low sugar and calories to make them a nicer option for this summer. I enjoy that these easy strawberry rickey’s are fruity, cool, and light enough for me to keep on hand all summer long.
A Healthy Mocktail
This easy strawberry rickey is the best way I’ve found to bend my own rules. For starters, it’s made with lots of fresh strawberries. Also, I took out the gin that is found in a traditional rickey and made this a non-alcoholic beverage that even kids would enjoy!
Finally, instead of sugar, I used SPLENDA® Sugar Blend. I enjoy SPLENDA®’s Sugar Blends, it’s just perfect for beverages like this strawberry rickey. The taste is great too; sweetness without all the calories!

- Ice cubes
- Sparkling lemon water
- Splenda
- Lemon juice
- Fresh strawberries

How to Make a Strawberry Rickey
- Add all of the ingredients to a blender.
- Blend until smooth.
- Serve in drinking glasses with lemon wedges if desired.
FAQs
Can I use frozen strawberries?
You can use fresh or frozen (thawed) strawberries for this recipe but fresh ones will taste even better as the flavor of the fresh berries isn’t as watered down as the frozen ones. If fresh strawberries are not in your budget or not in season, then using some thawed strawberries in their place will still be fine.
What garnishes can I use for a strawberry rickey?
To keep it simple and related to the flavors in your glass I recommend sticking with fresh strawberries and lemon slices or a nice curled lemon peel for a simple garnish idea.
What can I use instead of sparkling lemon water?
If you can’t find sparkling lemon water then you can easily swap it out for some lemon-lime flavored sodas like 7-up or Sprite. This will give you that nice citrus taste and fizzy/bubbly thing that we are looking for in our drink.

Ingredients
- 2 cups ice cubes
- 1 1/2 cups sparkling lemon water
- 1/4 cup SPLENDA® Sugar Blend
- 1 lemon, juiced
