In all my Valentine’s Days, there is one that sticks out the most. I think it was 7th grade and it was the first time I had a boyfriend for Valentine’s Day.
I was happy to have the task of buying a gift for my Valentine. I personally had always wanted one of those giant Hershey Kisses, so that is what I bought for my boyfriend.
Unfortunately (or fortunately) our two-week “love affair” came to an abrupt end by noon on Valentine’s Day. I was devastated. Until I realized the chocolate I bought for my now ex-boyfriend could now be mine. All was right in the world.
My husband and I don’t do much for Valentine’s Day. Sometimes we exchange cards, sometimes we go out to dinner, but honestly, our favorite way to spend Valentine’s Day is cooking and being together at home with good food and good wine.
This Steak Diane recipe is perfect for Valentine’s Day! It is the very definition of good food! It is elegant and delicious!
What Is Steak Diane?
Steak Diane is a pan-fried steak served with a sauce made from the pan juices and some sort of alcohol. Often the alcohol is cognac but it could also be wine or sherry.
The sauce sometimes contains onions but more often it is made with mushrooms.
How To Make Steak Diane
Beef is the perfect centerpiece to a romantic Valentine’s Day dinner. Premium roasts like ribeye and tenderloin are popular, but more economical roast choices – round tip, top sirloin, and eye round – are also delicious options.
For this recipe, I chose strip steak which usually has good marbling, flavor, and is a tender cut of beef. You can use tenderloin or filet mignon instead.
STEP ONE – Heat olive oil cast-iron skillet to medium heat. *Note* I love using my cast-iron for beef recipes, it is a great conductor of heat and cooks my beef evenly.
STEP TWO – Season the steak on both sides with salt and pepper. Since the steak is served with a lusciously flavorful sauce, the beef itself doesn’t need much more than salt and pepper for seasoning.
STEP THREE – Place beef in the hot skillet and cook the beef to medium-rare (or to your desired degree of doneness). This will take 4-5 minutes on each side depending on the thickness of your steaks.

When the steaks have finished cooking, remove the steaks and allow them to rest while you prepare the sauce.

STEP FIVE – Add dry white wine to the mushrooms along with Dijon mustard and Worcestershire sauce. Remove the pan from heat and whisk in heavy cream. Season the sauce with salt and pepper to taste.
Slice the steak across the grain and serve it with the sauce. Top each dish with freshly chopped parsley.
