Saucy ginger beef is easy when made in the slow cooker!
This simple recipe has amazing flavor the whole family will love!
We have made a big change in our household, we recently “cut the cord.” Yep, we got rid of cable and our land line. It’s only been a couple of weeks now, and I can say with certainty that we aren’t at all certain this is going to work. The internet speed is iffy which means that anything we stream buffers constantly. The new HD antenna works well, but will it be ok if we have storms or rough weather? Finally, I think I miss the landline. I’ve spent a stupid amount of money trying to save money, and in the end, I’ll probably eat crow and call cable to restart our service.
This whole experience is frustrating. Things should JUST WORK. If I stream a show, the internet should be enough. If I plug in an extender, then dang it, it should extend my internet. Nothing makes me crazier than when things inexplicably don’t work and I cannot easily fix them.
My slow cooker has never let me down. I plug it in, and it works. I set my timer, and it works. It’s my old faithful, and I love it. It allows me to serve my family foods like this Slow Cooker Beef and Barley Soup or this Easy Crockpot Pot Roast. It tickles me that I can put all my ingredients into one appliance, and at the end of the day, I have dinner. It’s simple, and did I mention, it WORKS?
This ginger beef recipe worked in my slow cooker too. I placed flank steak, peppers, broccoli, and a soy sauce mixture into my slow cooker and a few hours later, I had a saucy, ginger-flavored beef recipe that tasted amazing! What’s even better is knowing that lean beef is an important part of a healthy diet, even for kids. Research shows that including lean beef daily as part of a healthy diet can help lower cholesterol levels. A 3-ounce serving of beef (about the size of an iPhone) provides more than ten essential nutrients and half the daily recommended value of protein for less than 150 calories.
This simple recipe will make takeout a thing of the past. Why spend money and time getting ginger beef from any restaurant when you can place everything in your slow cooker in the morning and have dinner ready when you need it! Now, if only my internet can work as efficiently….

Slow Cooker Ginger Beef
Ingredients
- 1 1/2 lbs flank steak
- 2 tablespoon cornstarach
- 1/2 yellow pepper, sliced
- 1/2 red pepper, sliced
- 1 small head of broccoli cut into florets
- 2 cloves of garlic, minced
- 3 tablespoons minced ginger (jarred)
- 1/2 cup reduced sodium soy sauce
- 4 teaspoons sesame oil
- 1/2 cup beef broth
Instructions
Cut steak into strips and place in a zip top bag along with the cornstarch; toss to coat.
In a bowl, whisk together the garlic, ginger, soy sauce, sesame oil and broth.
Place steak in the slow cooker and add the sliced vegetables. Pour soy sauce mixture over the steak, cover and cook for 4 hours.

I don’t want to say I could live without it, but it sure would be hard to try streaming around here. Seems like it’s just waaayyyy too slow! Kuddos to you for cutting the cord. In theory, this sounds fabulous, reality is drastically overcooked mush. Broccoli cannot be cooked for 4 hours and be edible.

I didn’t have that probably actually. The broccoli wasn’t crisp, but it was fine for the recipe.

Used smaller 4 quart slow cooker, 1 pound of flank steak, and 3 teaspoons of sesame oil instead of 4. It’s high in sodium.
Cooked for 3 1/2 hours. Was delicious!! Broccoli was fine.

When making your slow cooker ginger beef could I use stewing beef instead of the flank steak the recipe calls for? It sounds delicious and my husband and I both love anything ginger and I just found some stewing beef in my freezer
