Simple ingredients and a simple cooking method make this slow cooker chicken chili a family favorite!
I do have to admit, I love a good kitchen gadget. I had to have a bread machine back in the day when bread machines were all the rage. I made exactly 6 loaves of bread with my machine before I decided that quick bread recipes were much better. Then there was a time I wanted only to consume fancy coffee from a French Press. So I bought one, used it twice moved on to my drip style coffee maker.
Recently I purchased a waffle maker. I’ve always loved the idea of making my own Belgian waffles! And I have made delicious waffles for sure. I made key lime waffles and browned butter waffles with spiced pears….and then my enthusiasm waned and my waffle maker went to the appliance graveyard also known as the back of my pantry.
Now I’ve seen Instant Pots advertised all over the place. I am a bit intrigued. I’ve always wanted a rice cooker and a pressure cooker, this little pot does all that and more. But on the flip side it is another appliance to use and store. The truth is, the one appliance that I could rely on over and over again has been my slow cooker. It has always been easy to use and reliable. It cooked this Slow Cooker Beef and Barley Soup just as well as it cooked this Apple Ginger Slow Cooker Ham. And it served up this Slow Cooker Chicken Chili exactly the same way!
As with many slow cooker recipes, this chili could not be any simpler. Chicken breasts, pinto beans, chicken broth, corn, seasoning and salsa is all you need to make a hearty, flavorful, filling chili recipe. You could vary the beans, veggies and even the salsa because there really isn’t any way you can go wrong with this easy recipe. I was able to use all Kroger brand products in this recipe. Yep, my slow cooker will around for a very long time!
Slow Cooker Chicken Chili
Instructions
Combine all the ingredients in your slow cooker. Cook chicken on high for 4 hours. Shred the chicken and return it to the crockpot; stir and serve.
