What is Pumpkin Spice Syrup?
This is a simple syrup made from sugar and water boiled down to a thick pourable mixture perfect for drinks and pancakes. Made with just 4 ingredients that you may already have in your pantry or can easily buy at the grocery store. Flavored with the help of some pumpkin pie spice and some pumpkin puree we get a tasty syrup that can pair well with just about anything this season.
Ingredients
- Brown Sugar–Gives the syrup a deeper and richer sweetness than using regular white sugar. I did not use regular sugar in this recipe but you could use it if it’s what you have at hand. I particularly like the caramel molasses notes that the brown sugar adds.
- Pumpkin Puree--This syrup won’t be a pumpkin spice syrup without the real pumpkin. It won’t just taste and look the same. You can purchase the canned pumpkin puree or you make your own from the scratch.
- Pumpkin Pie Spice— The pumpkin spice gives this brown sugar syrup recipe its distinct taste and flavor.
- Water–This will help to blend everything together and get us a good consistency.

How to Make Pumpkin Spice Syrup
- Add all ingredients to a pot or saucepan
- Whisk together all the ingredients until they are properly mixed.
- Bring to a boil while continuously stirring the mixture until the sugar is completely dissolved.
- Lower the heat and let the syrup simmer for 8-10 minutes and thicken.
- Allow to cool, then pour into a clean mason jar and store in your refrigerator for 1-2 weeks.

How to Store Flavored Syrup
- Store your simple syrup in an air-tight container in the refrigerator. Basic or regular simple syrups can be kept in the refrigerator for 3-4 weeks without growing molds. While flavored syrups as this ‘pumpkin spice syrup’ should be stored for 1-2 weeks. Make sure that the syrup has cooled completely before storing it in the fridge.
- If you intend to store the pumpkin syrup longer than 2 weeks, consider adding cream of tartar, citric acid, or lemon juice (just a little acid) to your syrup. This will help prevent crystallization (when something that has been melted {in this case sugar}, begins to form solid particles {or crystals}) and extend the shelf life of your syrup.
Can The Syrup Be Frozen?
Simple syrups can definitely be frozen and freezing it extends the shelf life for as long as you want to keep it. This syrup will not freeze solid, especially as it is heavy with pumpkin puree and a higher sugar to water ratio. It’ll become extremely gooey, but leaving it to come to room temp before using will loosen it up.
Uses For Pumpkin Flavored Simple Syrup
You can use this pumpkin syrup in your latte or plain coffee as well as baked goods. Some tasty examples include using it over pancakes, french toast, or put some syrup in your homemade donuts and baked goods.
Some more tasty ideas include:
- Stir the syrup into your oats and milk for an easy pumpkin spice oatmeal.
- You can whisk it together with heavy cream so you end up with pumpkin spice whipped cream.
- Add it to your Greek yogurt with fresh fruits for a sweet treat.
- Mix it into hot chocolate or cocktails.
Do I Have to Strain The Syrup?
You may wonder why other people strain their syrup, especially when all the spices are ground. Most people strain their syrup to remove most of the pumpkin solids because there are more likely to make the syrup go bad quickly or they settle at the bottom of the syrup. But, you don’t have to strain your syrup especially if you won’t be storing it for long. I didn’t strain this recipe and you don’t have to.
Substitutions
Skipping the puree. Simple sugar syrup is made with equal parts water and sugar. The flavors and color come from the optional addition of other ingredients. This is a ‘Pumpkin Spice Syrup’. So, if you skip adding the pumpkin puree, or don’t have any available, you will end up with a spiced sugar syrup – which will still be delicious. In this case, I would double the amount of spices.
Homemade or canned puree? If you have the time, I’d suggest you make your own pumpkin puree. But you can also use canned pumpkin puree. And if you chose to go in that direction, make sugar it is pure pumpkin or sugar pumpkin you are buying and not pumpkin filling.
