Nicoise Salad is a classic!
When the kids were little, we would have picnics in the yard almost every single day. We did this for a change of scenery, to break up the day, to enjoy the weather and to wear out the kids. The picnics were simple, pb & j, crackers, and apples but it was exactly what we all needed.
I don’t believe I have had a picnic since then, which is a shame because picnics are easy to throw together. Plus there is something immensely enjoyable about eating good food in the sunshine.
I’ve decided, now that spring is here, that I am bringing picnics back! This time, however, I’m going to enjoy a more “adult” picnic. Shaped PB & J sandwiches are replaced with Greek salad topped hummus, a simple melon, prosciutto, and basil salad, and this super simple Nicoise Salad. About this Nicoise Salad Picnic
-Nicoise salad recipes can vary, but a few things are a must, tuna and hard-boiled eggs! My version also features a few fingerling potatoes, cherry tomatoes, olives and green beans. A simple mustard dressing is drizzled over top! I like to use plump, red cherry tomatoes, but use your favorites. And while you should technically use Nicoise olives, kalamata or other black olives work just fine. I also use oil-packed tuna in the recipe to add quite a bit flavor to this recipe.
-The melon and prosciutto salad is the perfect salty/sweet combo. The best way to pick a good cantaloupe is by smell. The melon should have a slightly musty smell and should yield slightly when pressed. Prosciutto can be found in and near the deli case at Kroger and it can be served as is. Coarsely chop the ham along with some fresh basil for a refreshing salad that can be served on any occasion.
-Kroger is stocked with an abundance of hummus and I find that hummus travels well, which makes it perfect picnic food! I topped plain hummus (roasted garlic or roasted red pepper flavors would also be great) with fresh cucumber, Roma tomatoes, olives and feta cheese. The taste is vibrant and it could not be easier!
Each of the dishes described here adds a sophisticated flair to ordinary picnics and gatherings. You can skip the utensils and use your TRISCUIT Crackers to scoop up every delicious morsel!

Nicoise Salad
Picnic food gets classed up with a few simple dishes including this easy Nicoise Salad!
Ingredients
- 1 package Simple Truth Organic Romaine
- 2 hard-boiled eggs
- 1 cup cherry tomatoes, halved
- 4-5 boiled fingerling potatoes
- 2 5 oz can tuna, packed in oil
- 1/3 cup sliced olives
- ¾ cup cooked green beans, chopped
- ¼ cup olive oil
- 3 tablespoons vinegar
- 2 teaspoons Dijon mustard
- Salt and pepper to taste
- TRISCUIT Crackers (to serve with)
Instructions
Place the romaine lettuce on a platter. Arrange the eggs, tomatoes, potatoes, tuna, olives and green beans over the lettuce.
In a bowl or a jar, whisk together the olive oil, vinegar, and mustard. Season the dressing with salt and pepper. Drizzle the dressing over the salad just before serving.
