These fried donuts are tender and soft; they literally melt right in your mouth. These sweet pieces of dough are coated in powdered sugar and served with a lime dipping sauce. These donuts are perfect for breakfast, dessert and everything in between!
I’m not sure what you are doing during the quarantine, but we have been baking to beat the band. From cookies to cakes, we have done our fair share of baking.
Today, I ventured away from our normal baked goods to try some donuts! Nothing says comfort quite like freshly made donuts, right?
This donut recipe doesn’t require yeast, just a little time. The “mojito” comes from a jar of mojito drink mix. The flavor is subtle yet still shines through.
I did serve these donuts with a dipping sauce, although they are fine all on their own. The sauce has a splash of rum (optional) to make these an authentic mojito dessert!
What Do I Need To Make These Fried Donuts?
- Eggs – I like to use large eggs in my recipes.
- Sugar
- Ricotta cheese – you can use whole or skim for this recipe
- Mojito Mix-Found near the club soda or drink mixers in your grocery store (Fresh limes can be used instead)
- Flour – all-purpose flour
- Baking power
- Vanilla
- Vegetable oil – this is for frying
- Powdered sugar
- Milk
- Rum (optional)
How Do Make Fried Donuts?
- Combine the eggs, sugar, ricotta cheese, mojito drink mix, flour, baking powder and vanilla in a large bowl. Whisk ingredients until smooth.
- Add vegetable oil to a stockpot until it is an inch deep. Heat oil over medium-high heat until the temperature reaches 325 degrees.
- Using a small cookie scoop, carefully gather dough and drop 3 or 4 scoops into the hot oil. Allow donuts to brown for 1-2 minutes, flip donuts over and allow the second side to brown, which should take a minute. Remove donuts with a slotted spoon to a baking sheet lined with a paper towel. Repeat with the remaining batter.
- Allow donuts to cool completely before dusting with powdered sugar.
- To make the glaze whisk together powdered sugar, mojito mix or lime juice, milk, and rum (if using) until smooth. Hit the dipping sauce with zest just before serving.
Tips On This Fried Donuts Recipe
- Be sure to heat your oil before adding any of your donut batter. The best way I have found to test the oil is to insert the handle of a wooden spoon into your oil. If tiny bubbles dance vigorously around the handle, then the oil is ready.
- I used a small cookie scoop to gather my dough. Carefully drop each tiny spoonful into the hot oil, taking care not to splatter any oil. I added only 3 -4 donuts to the oil at a time. You don’t want to crowd your pan. For one thing, you do not want the donuts to stick together. Secondly, overcrowding will cause your oil temperature to decrease.
- The dough will rise to the top and take only a minute or so to brown, carefully roll the dough over and allow the second side to brown. This will only take a minute; remove donuts to a baking sheet lined with paper towels so that the donuts can drain.
- Wait until the donuts have cooled completely before tossing them with powdered sugar. If you coat them with sugar while the donuts are too warm it will melt into the donuts. Of course, this is fine if you are going to consume them immediately.
- These donuts are best when eaten the same day. I don’t think you will have any leftovers to worry about anyway.
Can You Freeze Homemade Donuts?
You can freeze baked donuts pretty easily, however, these donuts will soften quickly.
I would not recommend freezing these donuts.
How To Keep Fried Donuts Fresh?
These donuts really are best when served the same day. Any longer and the powdered sugar will melt away and soften the donuts.
However, that being said, keep your donuts in a storage bag or airtight container for 1-2 days. When you want to eat them, put your donuts in the microwave for 5 seconds to soften them. Let them cool and roll them in powdered sugar.

- 1 15 oz container ricotta cheese
- 2 tablespoons mojito drink mix
- 2 1/2 cups flour
- 4 teaspoon baking power
- 1 teaspoon vanilla
- vegetable oil
- 1 cup powdered sugar + more for rolling
- 1 tablespoon milk
- 2 tablespoons mojito drink mix
- Splash of rum (optional)
- lime zest

Notes
1. The best way to coat the donuts in powdered sugar is to place the sugar in a ziptop bag. Add a few donuts at a time and shake to coat.
2. Lime juice can be used in the dough (in place of the drink mix) and in the dipping sauce (in place of the drink mix).
3. Rum extract can be used in the dipping sauce.

I finally had a chance to make these -WOW – everyone loved them. I’d never fried donuts before and it was pretty easy. I don’t even really like donuts much unless from an indie bakery nearby – but these are on par. Very good flavor and texture. A fun treat. Thanks.
