Chicken soup has amazing powers. This is not new information, I know, but goodness it’s true. Mom’s homemade soup had total healing powers; any time I had the flu or even a cold, her soup would not only warm me deep in my bones, but it seemed to clear my lungs and my head as well. Homemade chicken soup could elevate my spirits like nothing else.
I loved mom’s homemade soup, but what I loved more was the feeling I had after eating the soup. I would almost instantly feel my illness leave me. Beyond that, I felt such warm comfort and love. That is what is amazing about food, it can evoke such strong feelings and emotions while you are eating after you eat and years later as you look back upon the memory of it.
Mexican Chicken Soup Does a Body Good
Just like this chicken florentine soup or this Buffalo chicken soup; this Mexican chicken exudes warmth. It has spice and flavor that will cure whatever ails you. To make this soup, I used a blend of soup starting vegetables like celery, onions, carrots, and garlic. Red Gold Crushed Tomatoes that are always bursting with fresh tasting tomatoes, as they are picked at the height of ripeness are added next. Spices, diced chilies, salsa, and broth bring the heat and the liquid. I added frozen corn and pinto beans (although any bean can be used) as well as one of my favorite staples, rotisserie chicken.

Mexican Chicken Soup
This Mexican Chicken Soup is a simple tomato-based soup that is filled with veggies and beans.
You can give this soup as little or as much spice as you like, it can handle anything!
Ingredients
- 1/2 teaspoon olive oil
- 1/3 cup frozen vegetable mix (celery, onions, and carrots)
- 2 cloves minced garlic
- 1 14oz can pinto beans
- 1 teaspoon salt
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon paprika
- 2 14 oz cans Red Gold Crushed Tomatoes
- 7 cups chicken broth
- 1 4 oz can chopped green chilies
- 1 cup frozen corn
- 1/2 cup Red Gold Salsa
- 1 rotisserie chicken, shredded
Instructions
Heat a large stockpot over medium heat. Add vegetables and cook until soft. Stir in garlic. Rinse and drain the pinto beans and add them to the vegetables. Stir in salt, cumin, oregano, and paprika. Add canned tomatoes, chicken broth, and chilies. Stir in the chilies, the corn, and salsa. Finally, add the chicken.
Bring soup to a boil, reduce heat and simmer the soup for 20 minutes. Serve soup with sliced avocado, sour cream, cheese, and cilantro.
