BAKED BBQ WINGS
My family and I recently walked into a tap room while we were traveling. We were starving and looking for some good food. The bartender told us the only food they served was BBQ and giant turkey legs. I wrinkled my nose and shook my head at the mere mention of turkey legs. Nothing grosses me out more than people eating giant turkey legs (except for people eating whole lobster, that grosses me out too, but that is a story for a different day).
I don’t know why that primal vision weirds me out. I seem to have zero trouble munching on Grilled Chicken Drumsticks or BBQ Ribs. And I never have a problem devouring platefuls of dry rub chicken wings. The concepts are all the same; eating the meat of an animal off the bone, yet for some reason eating chicken and ribs seems so much more civilized.
I absolutely love chicken wings and I order them almost everywhere we go. Fried wings are obviously delicious, but you can bake up wings to be crispy and just as tasty. In addition to being healthier, baked wings are less messy and you don’t need much too make the wings crisp up!
HOW TO MAKE BBQ Wings Recipe
For this recipe, you will coat your wings with olive oil, salt, and pepper. Place them on a broiler pan or a baking rack and be sure to rest the rack on a foil-lined baking sheet. The wings will take about 45 minutes. You will have to turn them once. Try not to crowd the wings, that will ensure even cooking.
While the wings are in the oven, start your bbq sauce. Memphis BBQ has more vinegar and is tomato based (as opposed to molasses) and it tends to be a little thinner (again, that has to do with the absence of molasses). Coat your wings with the bbq sauce and then bake an additional 10 minutes. Use any remaining bbq sauce as a dipping sauce for your wings!

Oh, those wings look delicious! Only, Memphis style BBQ sauce uses molasses as a sweetener. If one wants to stay true to style;)
