King Ranch Chicken, Beef Lomardi, Johnny Marzetti…how many of us grew up eating these typse of casseroles? My experience with casseroles was a little different; we ate pastitsio and spanakopita instead of casseroles. It wasn’t until I started a family that I realized the value of a casserole.
Casseroles have a place on our dinner tables, they feed a lot of people and make for great leftovers. They are practical, efficient and funtional. I served my time making casseroles, but now I find that quick one pot meals like this one pot Alice Springs Chicken or this one pot unstuffed peppers recipes suites our needs better.
That doesn’t mean I can’t take the flavor of King Ranch Chicken and turn it into a cheesy and delicious party dip! Who doesn’t love party dips and we all have a gazillion times a year where they are a necessity! With fall approaching and with it tailgating and football parties, this dip will probably make several appearances.
For this recipe, I used chili diced tomatoes, rotiserrie chicken (my best friend), a poblano pepper, sour cream, pasteurized cheese product (get over it, nothing melts quite like it), and both taco and Ranch seasoning. I’m sure someday I may throw in some elbow macaroni and call it dinner but for now, this is my new favororite dip. The fact that it can be made in the crockpot is even better!

Ingredients
- 1 10oz chili diced tomatoes
- 1 lb pasteurized cheese product, cubed
- ⅓ cup diced poblano
- 2 cups shredded chicken
- ½ cup sour cream
- 2 tablespoons taco seasoning
- 1 tablespoon ranch seasoning
Instructions
In a small slow cooker, combine diced tomatoes, cheese, pepper, chicken, sour cream and seasoning; stir. Heat on high for 1 hour until cheese has melted. Stir to combine.
