My husband is a creature of habit, at least where food is concerned. If we dine out and the restaurant serves chicken parmesan and has key lime pie, then his search is over..that is exactly what he will order.
I like to try new things and explore different flavors. I never want to order something I can make at home.
Often, I am left dissatisfied with my food choice. 100% of the time my husband walks away happy. I suppose the moral of the story is stick with what you know and you will never be disappointed.
I made this key lime curd recipe for this Coconut Key Lime Cake for my husband’s quarantine birthday. The center of the cake is buttercream and key lime curd. The lime curd makes more than enough for the cake. I could eat the lime curd with a spoon, but then I will have regret. It is much better to repurpose the lime curd instead!
These dessert parfaits are easy and quick and are a little change from an ordinary key lime pie!
What Is A Parfait Dessert?
Traditionally, a parfait is a French custard-based dessert whereas Americans refer to a parfait as a layered dessert that can either be decadent (with cake, ice cream, pudding, etc) or made with fresh fruit, yogurt, and granola and consumed for breakfast rather than dessert.
This parfait recipe is definitely on the dessert side but if you had it for breakfast, I wouldn’t judge.
How Do I Make This Key Lime Parfait?
You will need about 1 ½ cups to 2 cups of homemade lime curd. I used leftover curd from my cake, if you make the curd strictly for this recipe, then you will be able to use the full two cups.
If you can find premade or storebought lime curd, that can be used as well.
In a bowl, combine the graham cracker crumbs, sugar, and melted butter.
Divide half of the graham cracker mixture between 4 short glasses. Divide half of the curd and carefully spread it over the cracker crumbs, followed by half of the whipped topping. Repeat the layering process one more time.
Refrigerate your parfaits until serving time. These parfaits are the perfect make-ahead-dessert!
Parfait Tips
Graham cracker crumbs were an obvious choice in this recipe, but you could swap them out for Oreos or chocolate wafer cookies.
This recipe yields a small number of servings. I had enough to fill 4 martini glasses, you could use tall glasses for two servings instead.
Cool Whip makes this recipe especially easy, but homemade whipped cream can be used instead.

- 4 tablespoons melted butter
- 8 oz Cool Whip
Instructions
- Prepare key lime curd.
- In a bowl, combine the graham cracker crumbs, sugar, and melted butter.
- Divide half of the graham cracker mixture between 4 short glasses. Divide half of the curd and carefully spread it over the cracker crumbs, followed by half of the whipped topping. Repeat the layering process one more time.
- Refrigerate your parfaits until serving time.
