Pimento cheese dip is a must
This pimento cheese dip is making an appearance this New Year’s Eve and there isn’t even a party to host or attend. I take that back. There are parties to host and there are parties to attend, but my family has decided we are ringing in the new year in a low-key, family sort of way. We will be watching movies and munching on all our favorite snacks. This pimento cheese dip is my favorite, my daughter is requesting these bacon wrapped roasted potatoes, my youngest has asked for M & M Party Popcorn , my son says he only wants ranch soft pretzel bites and my husband just nods his head and says yes to all the above. The five of us are in for a real feast!
New Years Eve was a much bigger deal when I was in my 20’s. Back then it was all about what parties to go to, what little black dress to wear and who to kiss at midnight. I had the energy to deal with crowded parties and events, I was willing to walk around in high heels and short dresses no matter the weather and I was willing to stay out LATE. All of those sound terrible to the wiser and more mature Tanya of today. The Tanya of today wants to wear pj’s at 8 pm, eat all sorts of bad food in the comforts of my own kitchen and go to bed no later than 12:01 am. That sounds like the perfect New Years Eve.

No matter what you are doing this New Year’s Eve, I think this pimento cheese dip is a must. It is as simple as it is addicting! Hot melted cheese and salty bacon are a perfect pair in this appetizer that works with veggies, crackers chips or bread rounds. The only thing better than this hot pimento cheese dip is eating it in your pajamas, which is exactly what I intend to do!

Hot Bacon and Pimento Cheese Dip
This pimento cheese dip takes a southern classic and makes it better! Bacon is added to homemade pimento cheese then the whole dip gets backed until the cheese is hot and melted. Gooey never looked so good!
Ingredients
- 8 oz cream cheese, softened
- 1 cup sour cream
- 1 1/2 cups cheddar cheese
- 8 slices chopped cooked bacon
- 4 oz jar pimentos, drained
Instructions
Preheat oven to 400 degrees. Spray an 8 inch baking dish with non-stick spray and set aside.
In a bowl, combine the cream cheese, sour cream shredded cheddar, cooked bacon and drained pimentos. Stir until combined. Pour cheese mixture into prepared dish and bake for 20 minutes or until hot and bubbly.
