Pasta is my kind of comfort food. I grew up eating pasta stroganoff, so for me, it brings forth comfort and nostalgia.
Although, when it comes to my mom’s stroganoff, the pasta and the sauce were always delicious, however, the beef was tough and chewy. I understand that sometimes the cut of meat used can give you chewy meat, so my workaround is to use ground beef.
Ground beef is economical, accessible, and quick cooking.
What Do I Need To Make This Beef Stroganoff Recipe?
- Butter
- Onion
- Garlic
- Baby Portobella mushrooms
- Salt
- Thyme
- Rosemary
- Flour
- Beef broth
- Greek yogurt
- Cream cheese
- Egg noodles
How To Make Ground Beef Stroganoff
STEP ONE – Prepare egg noodles according to package directions.
STEP TWO -Melt butter in a large, deep or Dutch oven. Add onions and mushrooms to the warm skillet. Cook until vegetables have softened. Add garlic and cook another minute. Remove the vegetables and set aside.
STEP THREE – Add ground beef to the same skillet. Crumble as you cook. Season the beef with salt, thyme, and rosemary. Cook until the beef is no longer pink. Remove the beef and set aside.
STEP FOUR – Add more butter to the skillet. Whisk in the flour until combined. Continue whisking and stream in the beef broth or beef stock until the mixture combines. Cook until slightly thick. Stir in the Greek yogurt and the cream cheese.
STEP FIVE – Toss the egg noddles with butter and add the noodles and the meat mixture to the creamy sauce, turning to coat. Garnish with parsley if desired.
Can Beef Stroganoff Be Made Ahead Of Time?
Technically, you can make this recipe in advance, but I wouldn’t advise making ALL of it in advance. Creamy pasta sauces do no reheat well.
If you are looking to save time, prepare the meat mixture and even the pasta in advance. When you are ready, follow the recipe from step four and beyond.
Can Beef Stroganoff Be Frozen?
Again, because of the dairy used in the sauce, I would not freeze this recipe. However, you can prepare the meat mixture and place it in a ziptop bag and freeze it to save you some time.

Feel free to use any type of noodle in this recipe, inf fact you can even serve stroganoff over mashed potatoes!
Add sour cream to your sauce in place of the Greek yogurt.
You can easily flavor your sauce with a splash of red wine vinegar, Worcestershire sauce, or Dijon mustard.
What To Serve With Beef Stroganoff
Keep it simple! Serve steamed broccoli or crusty bread alongside your beef stroganoff. You can also serve balsamic green beans or a spinach salad!

- 2 cloves garlic
- 8 oz sliced baby Bella mushrooms
- 11/2 lbs lean ground beef
- ¾ teaspoon salt
- 1 teaspoon thyme
- 1 teaspoon rosemary
- ¼ cup butter
- ¼ cup flour
- 2 cups beef broth
- ⅓ cup Greek yogurt
- 2 tablespoons cream cheese
- 1 l cooked egg noodles
