My Favorite Cobb Salad Recipe
I have only had the pleasure of traveling to Greece only in my life. I went with my parents when I was 10 years old. My parents were both born and raised in Greece, and it was a treat to see their country through their eyes.
I don’t remember everything about that trip. I do remember the hotel pool because it looked over the city of Athens. I remember my dad’s home and the mare that kicked every time you walked by to use the outhouse…I VIVIDLY remember that outhouse. I remember the Acropolis, the market where we bought the best hard salami and freshly baked loaves of bread, and I remember the salads that were served at every meal at every restaurant.
The Greek salad always featured fresh and crisp cucumbers, plump and ripe tomatoes, red onions, chunks of feta cheese, olives and the tangiest of dressings. Those salads were simple yet completely delicious. They were the perfect side to any meal.
Greek Cobb Salad Recipe
This Greek Cobb salad recipe takes the flavors from this Greek Chicken Souvlaki and combines with elements from this Grilled Veggie Cobb Salad and this Southwest Cobb Salad to create the perfect dinner salad! This cobb salad has everything a good cobb salad should have like bacon, eggs, chicken, and tomatoes but it also has feta cheese, kalamata olives and a simple Greek dressing drizzled over top.

Greek Cobb Salad Recipe

Perfectly seasoned chicken and a rainbow of veggies are placed over lettuce and topped with a very simple vinaigrette!
Ingredients
- 2 cups cubed chicken
- 2 tablespoons olive oil
- 2 cloves minced garlic
- ½ teaspoon salt
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- The juice from 1 lemon
- 1 bunch of mixed lettuce
- ½ cup sliced yellow squash
- ½ cup sliced zucchini
- ½ cup kalamata olives
- ½ cup cooked bacon
- 2 hard-boiled eggs, chopped
- ½ cup halved cherry tomatoes
- 2 oz crumbled feta
- ⅓ cup olive oil
- ¼ cup lemon juice
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon salt
- 3 cloves minced garlic
Instructions
Toss together the cubed chicken, olive oil, garlic, salt, oregano, basil, and lemon juice, turning to coat. Heat olive oil in a large skillet over medium heat. Add chicken (discard marinade) and cook until chicken is no longer pink about 6-8 minutes, remove chicken and allow it to cool.
In a bowl or a large platter, arrange lettuce leaves. Top lettuce with cooked chicken, squash, zucchini, olives, bacon, eggs, tomatoes, and crumbled feta.
In a salad dressing shaker or a jar, combine olive oil, lemon juice, basil, oregano, salt, and garlic, shaking to blend. Pour dressing over salad just before serving.

This recipe is fun because it takes the classic cobb salad and gives it a Greek twist! In addition to following this recipe as it is written, you can also add or subtract different vegetables depending on what is in season and what you have on hand. I also may be tempted to add a little more feta depending on my mood just because I love that cheese!
