One of my jobs as a mom is to foster a love of food and cooking in my kids. When my kids tell me they want to bake cookies, I first cringe at the thought of the mess, then I reluctantly and lovingly hand over control of my mixer and the oven.
This week my youngest and my son were craving chocolate chip cookies, so I let them bake all on their own. Apparently, I should have supervised a little more. As I was busy with my oldest daughter, these two were furiously stirring ingredients into the batter. After the first batch had gone into the oven, I came in to ask how everything was going and take a little taste. I could not spit that cookie out fast enough! The cookies tasted much more like a salt lick than a chocolate chip cookie. When I asked them how much salt they put into the batter, they bowed their heads and sheepishly admitted that they put a whole cup of salt into the batter. They said they realized their mistake right away so they added extra sugar and vanilla in the hopes of masking the salty flavor.
At first, I was upset; all that flour and butter (not to mention salt) totally wasted! But then I had to laugh. I mean, a whole cup of salt is pretty darn funny; it’s like a sitcom episode. There wasn’t much we could do with those cookies, so we threw them out and decided upon making lemonade instead.
There’s no salt in this lemonade; it is so sweet and delicious! This lemonade is made with fresh peaches, SPLENDA® No Calorie Sweetener, and real ginger that gets blended with crisp lemon juice. This ginger peach lemonade is simple to blend up and tastes so refreshing. The ginger adds a punch of unexpected flavor in this sweetly tart drink that will go down so smoothly! Ginger Peach Lemonade
This peach lemonade is thirst-quenching with its fresh sweet peaches, and it’s tart lemonade.
Ingredients
- 2 cups chopped peaches
- 4 cups water
- 1/2 cup SPLENDA® No Calorie Sweetener
- 1 small chunk of fresh ginger
- 2/3 cups lemon juice
Instructions
- In a saucepan, combine peaches, water, sweetener and ginger. Bring to a boil over medium heat. Continue to boil mixture for 3 minutes, remove from heat and let cool.
- Add peach mixture to a blender and blend completely. Place peach mixture in the refrigerator for 1 hour.
- Remove mixture and pour over a mesh strainer to strain out the liquid. Combine the peach juice with the fresh lemon juice; serve.
