What Is Elote Style Corn?
Elote is cooked sweet corn covered in a mixture of mayonnaise, crema, and chili powder and then sprinkled with cheese. It is often referred to as Mexican street corn because it’s a popular snack sold street vendors in Mexico.
What Do I Need To Make This Corn Salad?
Fresh corn – It is such a great time of year for fresh corn! But frozen corn or canned corn are always a good substitute.
Mayo – Any kind will do!
Plain Greek Yogurt – This adds a rich-tasting tang to the recipe
Splash of Lime -Use a fresh lime if possible
Chili powder
Cumin
Salt
Cotija cheese – This can usually be found in the ethnic section of your grocery store. This unpasteurized cow’s milk cheese is crumbly and dense.
How To Make This Elote Corn Salad Recipe
Prepare your ears of corn by either boiling them, grilling them, or broiling them. You need about 4 cups of corn for this recipe.
Remove the corn kernels from each ear and place them in a bowl.
Add mayo, yogurt, lime juice, seasoning, and stir to combine.
Crumble the Cotija cheese over the salad just before serving.
Garnish with lime wedges if desired

Charred or grilled corn would add so much flavor to this salad!
Use Mexican Crema in place of the yogurt for a more authentic dressing.
If you want to beef up the salad you could certainly add cherry tomatoes, onions, diced peppers (poblano or jalapenos would be lovely), and diced avocados.
