All these years I sort of assumed I would hate egg salad. I love hard-boiled eggs, but I was always afraid egg salad would taste too eggy if that makes sense. Plus most egg salads appear to be very mayo heavy which is a turn off for me.
I had leftover hard-boiled eggs after making these Southwest Deviled Eggs, so I thought why not go ahead and at least try to make egg salad. The end result was so good, I am now a true believer!
What Is Egg Salad?
At its core, egg salad is simply chopped hard-boiled eggs and mayo, beyond that there are so many ingredients to be added to flavor your salad!
How To Make Egg Salad
This recipe is going to assume that you have hard-boiled eggs ready to go.
In a bowl, place halved or quartered hard-boiled eggs, a little and a little sour cream in a bowl and sort of mash them together. You can either use a fork for this, a potato masher, or even the back of a spoon.
The egg mixture, add a little dijon mustard, salt and pepper and my secret ingredient (not so secret anymore) a little cider vinegar. The vinegar and the mustard add a little tanginess the mixture which I find delightful.
What Other Ingredients Can I Put In My Egg Salad?
If you like the taste of a classic egg salad recipe, then keep it simple and just mix together the eggs, mayo, yellow mustard, and green onions. Other add-in suggestions are:
- Red Onions
- Chopped Fresh Dill (or other herbs of your choosing)
- Chives
- Bacon
- Avocado
- Peppers
- Jalapenos
- Feta Cheese
- Cilantro
If you are wanting to know what you can use besides mayo, you can use all Greek yogurt, add sour cream, or just use avocado to cream and thicken your fresh eggs. You can also add a little more mustard to your eggs and leave out the mayo if you prefer.
Will Egg Salad Keep Overnight?
If your egg salad is properly stored (covered in the refrigerator), egg salad will last for 3 to 5 days.
How long can egg salad be left at room temperature? Bacteria grow rapidly at temperatures between 40 °F and 140 °F; egg salad should be discarded if left out for more than 2 hours at room temperature
Why Does My Egg Salad Get Watery?
The egg salad itself can get watery after it sits for a while, though. To alleviate this, make sure the eggs aren’t overcooked, chill them well before chopping.
If you have too much moisture you can always add more eggs and refrigerate the mixture to allow the ingredients to come together.
What Goes With Egg Salad?
Nothing beats an egg salad sandwich! But egg salad can be used in salads, on crackers, on bagels, or even stuffed inside avocados for a “deviled egg avocado”

Ingredients
- 6 hard-boiled eggs
- 2 tablespoons mayo
- 2 tablespoons sour cream
- 1 tablespoon dijon mustard
- Salt and black pepper
- ½ teaspoon cider vinegar
- Pinch of paprika
Instructions
- Coarsely chop the hard-boiled eggs and place them in a bowl.
- Stir in the mayo, yogurt, mustard, salt, pepper, and vinegar stir until combined.
- Store egg salad in an airtight container in the fridge.

Along with the mayo, do you add SOUR CREAM or YOGURT to the egg salad? Sour cream is in the list of ingredients but yogurt is in the instructions.
