I have been trying to sneak in a few vegetarian meals into our diets. The biggest reason is I need to get more veggies into my teenage son.
My son is tall and lean and prefers to exist on Cheese Its and Muscle Milk. Not the best diet, but it is not as easy to make him eat a well-rounded meal at 15.
Therefore, my thought was if I can get a few vegetarian dinners on the table each week, then he has no choice but to consume healthy veggies and I will have some peace of mind.
I chose cauliflower for these tacos because they are mild tasting, quick-cooking and generally liked by all, They are also hardy and filling,
Because cauliflower is a little on the bland side, I used the dry rub mix from my Dry Rub Chicken Wings. The thing about this rub mixture is you probably have all the ingredients ready to go!
What Do I Need To Make These Cauliflower Tacos?
A large head of cauliflower
Dry Rub Seasoning (brown sugar, paprika, chili powder, onion powder, garlic powder, cumin, salt, rosemary)
Olive Oil
Tortillas
Slaw Mix (bagged or homemade)
Mayo
Dry ranch seasoning
Blue cheese
Milk
How Do I Prepare Dry Rub Cauliflower Tacos?
STEP ONE – Cut the cauliflower into bite-sized florets.
STEP TWO – In a small bowl, combine the spices for the dry rub.
STEP THREE – In a large bowl, toss together the cauliflower florets, olive oil, and dry rub seasoning.
STEP FOUR – Place the cauliflower on a baking sheet and roast the florets for 15-18 minutes in a 450-degree oven.
STEP FIVE – In a small bowl, stir together the mayo, ranch seasoning, and blue cheese. Add enough milk to thin out the dressing.
STEP FIVE – Divide cauliflower between 4 tortillas, top each cauliflower with slaw and dressing. Serve immediately.
Cauliflower Recipe Tips
I list 4-6 tortillas in the recipe, because the quantity of tacos is largely dependent upon your cauliflower head and how many florets you get.
Feel free to play around with the seasoning, adjust the heat to your taste.
Blue cheese can have a strong flavor, grated Parmesan or feta cheese can be used instead as you prepare the dressing.
You will likely only need about a tablespoon of milk for your dressing, add just enough for your desired consistency.
You can easily add more veggies to this taco recipe by roasting peppers and onions along with your cauliflower.
If your florets are pretty small, then watch them in the oven, the smaller the pieces, the less time they will need in the oven.

as you write, cauliflower is definitely on the bland side, but is part or at least should be a part of my daily diet so I need something to help! thank you, even if I have to omit a few ingredients like sugar (except for my day off) so much appreciated!
