This creamy cucumber salad is made up with fresh and cool cucumbers that are thinly sliced and coated in a creamy buttermilk ranch dressing!
There was a time where I only kept cucumbers stocked as part of my home-facial routine. My sister and I would had a whole set up. We would brush egg on our faces (whites for oil skin, yolks for dry skin), steam our faces with chamomile tea and finish off with a few cucumbers to be placed on our tender, weary eyes.
The cucumbers did help our puffy eyes, but the truth of the matter is cucumbers are amazing vegetables. They are the quiet ones. They are the wallflowers of vegetables. They sit in the background, waiting to be tossed in a salad or if they are lucky, placed in a sandwich, when cucumbers should actually be the star of the show.
Cucumbers are full of vitamins (including anti-inflammatory vitamins such as Vitamin K). In some studies, cucumbers are thought to assist in lowering the risk for heart disease, and certain cancers. Aside from all that, they are mild, easy to eat and taste so good! Since they are locally grown, they are ready to eat right now!
I have used cucumbers in drinks like this Cucumber Mint Cooler, this Cucumber Melon Sangria as well as in Bahn MI Taquitos or mixed in with Mediterranean Chicken and farro. It is the kind of vegetable that can be served as an appetizer, mixed in with other ingredients or a is perfect all on its own.
Today I’m sharing a very simple creamy cucumber salad recipe that can be served along side almost any dish! It only takes minutes to prepare and all your ingredients can be purchased at Kroger! I picked out two gorgeously green, locally grown and fresh cucumbers from the produce section of Kroger. Quality is never an issue with Kroger, I always know the local produce I pick for my recipes are going to be ripe and ready to go!
I added yellow tomatoes and red onion, you can swap those out with their traditional counterparts. For the buttermilk dressing, I combined buttermilk, Greek yogurt, garlic, and seasoning and drizzled the dressing over the cucumbers just before serving! You are going to love the ease of this recipe, the tangy dressing and the cool, crisp taste of the veggies!
Creamy Cucumber Salad
Ingredients
- 2 whole cucumbers, thinly sliced
- 1 cup yellow cherry tomatoes, halved
- 1/ 2 thinly sliced red onion
- 1/2 cup buttermilk
- 3 tablespoons plain Greek yogurt
- 1 tablespoon ranch seasoning
- 2 cloves minced garlic
- 1/2 teaspoon vinegar
- salt and pepper to taste
Instructions
In a bowl, combine the cucumbers, tomatoes, and onions.
In a separate bowl, whisk together the buttermilk, yogurt, seasoning, garlic, vinegar, salt, and pepper. Drizzle dressing over the vegetables just before serving, toss to coat.
