These cottage chips are often fried but we’re making them a little more healthy by baking ours in the oven instead. Because of this, we can reduce the number of unnecessary fats and still get delicious crispy fries to enjoy within minutes.

How to Make Cottage Fries
Slice your potatoes until they are about ½ inch thick round slices.
You will want to pat the potato rounds dry with a paper towel. This will help the seasonings and oil to stick better.
Add your potato slices to a bowl.
Stir together the salt, pepper, Italian herbs, and chili powder until combined.
Toss in the olive oil and make sure that all of the potatoes are well coated.
Lay your potato slices out onto a baking sheet.
Bake in the oven at 375 degrees F for 15-20 minutes until golden.

The great thing about cottage fries is that you can load them up however you want or eat them simply and plainly. They go great either way but for some fun ideas you can load your crispy fries up with some:

- Shredded cheddar cheese

- Greek yogurt (plain)
- Slices jalapenos
- Salsa or Pico De Gallo are also great ideas!
Recipe Tips
I do not recommend making these ahead. These fries taste best when they are made fresh and ready to serve so I do not recommend making them in advance. You should be ready to eat them shortly after they’ve finished baking because french fries are always best tasting when fresh from the oven.
Flip the potatoes halfway. For extra crispy fries make sure to flip them about halfway through the baking process. This will get both sides evenly crisp.

What kind of potato should I use for cottage fries?
You should use russet potatoes for these fries as most french fry recipes use russets. You could use Yukon golden potatoes if you have those on hand but keep in mind that the baking time will vary as they might take longer to cook because of the size. The end results will also be different as Yukon aren’t made to cook up as fluffy as a russet.
What should I dip fries In?
These fries go with anything that you’d normally dip a fry in. For example, you can use anything from your standard ketchup sauce to a nicer aioli dip.
Are oven-baked fries healthier?
Yes, oven-roasted fries are much healthier than the greasy fried versions. This is because when frying, french fries will soak up some of that grease and fat which would then be consumed by you. Instead, we are oven baking this cottage fries recipe so that they turn out crispy on the outside, fluffy on the inside, and they contain far fewer fats in every bite so you can have more of what you love.

Ingredients
- 3 Potatoes
- Salt to Taste
- 2 Tsp Italian Herbs
- Pepper to taste
- 1 Tsp Chili Powder
- 3 Tbsp Olive Oil
- Parsley for Garnishing
Instructions
- Cut the potatoes into about ½ cm thick slices
- Add the salt, pepper, italian herbs and chili powder and mix together
- Add the olive oil and make sure all the potatoes are covered
- Lay them out onto an oven proof tray
- Bake for 15-20 min at 375F
