Ingredients
For the Cookies, you will need:
- Semisweet Chocolate
- Butter
- All-Purpose Flour
- Salt
- Baking Powder
- Egg
- Granulated Sugar
- Pure Vanilla Extract
For the Frosting Filling, you will need:
- Butter
- Creamy Peanut Butter
- Powdered Sugar
- Pure Vanilla Extract
- Milk
- Mini Chocolate Chips
How to Make Chocolate Peanut Butter Sandwich Cookies
For the Cookies:
- Combine the chocolate and butter in a small saucepan over low heat until both have melted. Stir until smooth and then set aside.
- In a small bowl, combine the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat together the eggs, sugar, and vanilla until the mixture begins to thicken.
- Stir in the cooled chocolate mixture followed by the flour mixture.
- Beat together until combined and let the batter rest for 10 minutes so that it can thicken up.
- Preheat your oven to 375 degrees F.
- Drop your batter by the tablespoonfuls onto a parchment-lined baking sheet. Make sure to leave about 2 inches of space between each cookie.
- Bake in the oven for 8 minutes or until the edges are set and the cookies look slightly cracked.
- Let them cool for 1 minute before removing them to a cooling rack.
For the Frosting Filling:
- In a mixing bowl, combine the butter and peanut butter, beating well until smooth.
- Slowly add in the powdered sugar, one cup at a time, beating well until smooth after each addition.
- add in the milk and beat until the frosting is a spreadable consistency. If needed, add in more milk.
- Stir in the mini chocolate chips.
To Assemble:
- Pipe the frosting or place a generous spoonful onto the bottom of 6 cookies.
- Top each cookie with the remaining cookies and press together to create a sandwich.
- Serve and enjoy!

Instructions
For the Cookies:
- In a small saucepan, combine chocolate and butter. Heat over low heat until both have melted. Stir until smooth and set aside.

To Assemble:
- Pipe or spread a generous spoonful of frosting over the bottoms of 6 cookies.
- Top each with remaining cookies.
