My kids pack lunch every single day. They claim that the school lunches are kind of gross and I’m not entirely sure I blame them. Plus, when I pack their lunches for them, I know they’ll have fruit and vegetables with them each day. Of course, they could be tossing the healthy stuff into the trash, but I’m choosing to believe that the good stuff gets devoured.
Our school has a sort of bank account, where parents can deposit money for the kids to draw from each time they want to purchase food at the lunchroom. Last year I found myself adding money to my middle school daughter’s account over and over again despite the fact that she never purchased lunch. I found out that the one thing the school does offer is cookies that are “insanely delicious”. Here I was spending a small fortune on cookies! The cookie consumption was getting out of hand, she had to be cut off.
This year I will have two in middle school, but I am prepared for the cookie dilemma. I just have to make cookies better than the ones offered at school. These chocolate peanut butter explosion cookies should do the trick. These babies are loaded! I take two separate cookie batters (both made with peanut butter) that are each filled with peanut butter chips and peanut butter cups. Salty pretzels are added just before baking. The chocolate to peanut butter ratio is spot on in this sinfully good cookies (if you love peanut butter, then you have to see these No-Bake Peanut Butter Bars)!
If these cookies don’t convince my kids to quit the school cookie habit I don’t know what will. These cookies are soft, chewy, and sweet with a little crunch too! They really could not be more perfect!
Chocolate Peanut Butter Explosion Cookies
Chocolate and peanut butter are swirled together in these Chocolate Peanut Butter Explosion Cookies! Peanut butter cups, peanut butter chips all make an appearance as do pretzels which add a little saltiness to the sweet mix!
Ingredients
- 1/2 cup peanut butter
- 1/4 cup softened butter
- 1/4 cup shortening
- 1 cup brown sugar
- 1 egg
- 1/2 teaspoon vanilla
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 1/4 cup flour
- 1/4 cup peanut butter chips
- 1/4 cup chopped mini Reese Cups
- 1/2 cup peanut butter
- 1/4 cup butter
- 1/4 cup shortening
- 1/3 cup sugar
- 1/3 cup brown sugar
- 1 egg
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1 1/3 cup flour
- 1/2 cup cocoa powder
- 1/2 cup peanut butter chips
- 1/4 cup chopped mini Reese Cups
- 1/3 cup finely crushed pretzels
Instructions
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and set aside. In a bowl cream together peanut butter, butter, and shortening. Beat in the sugar until creamy. Stir in the egg and the vanilla. In a separate bowl, whisk together the baking soda, baking powder, and flour. Mix until dry ingredients have combined. Stir in peanut butter chips and Reese cups. Set batter aside.
In a second bowl, beat together the peanut butter, butter, and shortening. Stir in the sugars until creamy. Mix in the egg and the vanilla until combined. Stir together the dry ingredients and add it to the wet ingredients until fully blended. Stir in the peanut butter chips and the Reese cups.
Take a teaspoon of each batter and combine together to form a ball. Dip the tops of the cookie into the crushed pretzels. Place on a baking sheet and continue with the remaining batter. Bake in batches for 10 minutes or until browned. Allow cookies to cool on the baking sheet for 1-2 minutes before removing to a cooling rack.
Notes
The chocolate batter has a tendency to be a little crumbly, keep that in mind as your form your cookie.
Pretzels could also be blended into each batter if you prefer.

Im not seeing any cocoa powder in this recipe, is there supposed to be cocoa in the chocolate dough?
