You are going to flip for this tasty nachos recipe! We’re taking nachos to all new heights with these loaded elevated nachos. Packed with cooked chicken and pork loin, multiple cheeses, blue and yellow corn torillas (for health and color) as well as a homemade chimichurri sauce over the top is what makes these anything but your average nachos.
Fully Loaded Nachos
I spiced up diced chicken and pork and cooked them until browned and fragrant. I placed both types of meat on a mix of corn tortilla chips and then added some creamy mozzarella and crumbled queso Blanco cheese. I broiled this in the oven for 5 minutes or just until bubbly and then I hit it with spicy jalapenos, cool avocados, and a simple, homemade chimichurri sauce.
The chimichurri sauce is adapted from my chimichurri guacamole. Fresh parsley and cilantro are processed together along with olive oil, lime, oregano, and red wine vinegar. All the textures and flavors of these Brazillian nachos will definitely satisfy your tastebuds.
Ingredients
For the meat mixture, you will need:
- Chicken
- Pork loin
- Olive oil
- Salt
- Garlic cloves
- Cumin
- Paprika
For the chimichurri sauce, you will need:
- Cilantro
- Parsley
- Garlic cloves
- Dried oregano
- Lime juice
- Red wine vinegar
- Olive oil
You will also need:
- Mozzarella cheese
- Queso Blanco
- Jalapeno
- Yellow Corn Tortilla Chips
- Blue Corn Tortilla Chips
How to Make Brazilian Style Loaded Nachos
- Preheat a skillet over medium heat.
- Cut your chicken and pork into tiny bite-sized pieces and place them into a bowl.
- Toss together with olive oil, garlic, cumin, and paprika.
- Add the meat to the heated skillet and cook for 8-10 minutes or until no longer pink.
- Remove from the heat and set aside.
- In a food processor add the chimichurri ingredients and process until well blended. Add in more olive oil to thin it down if needed.
- Assemble your nachos by placing the yellow and blue tortilla chips in an ovenproof pan or skillet.
- Top the chips with the pork and chicken, mozzarella, and Queso Blanco.
- Place the nachos under a broiler that has been preheated to low.
- Heat for 3-5 minutes or until the cheese is melted and bubbly.
- Remove the nachos from the oven and drizzle chimichurri sauce over the top.
- Add avocado and jalapeno for garnish over the top.
- Serve and enjoy!

How do you keep loaded nachos from getting soggy?
A great way to prevent the tortilla chips from getting soggy is to heat the cheese on the chips for a few minutes before adding any wet toppings. this includes salsa, guacamole, or sour cream. adding wetter ingredients before warming up the cheese means those juices can get to the tortilla chip and make it soggy more quickly.

Loaded Nachos {Brazilian Style}

For the meat mixture, you will need:
- 1 cup chicken (Meijer's True Goodness), cut into bite-sized pieces
- 1 cup pork loin, cut into bite-sized pieces
- 2 teaspoons olive oil
- 1/2 teaspoons salt
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
For the chimichurri sauce, you will need:
- 1 small bunch cilantro
- 1 small bunch parsley
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Juice from 1 lime
- 2 tablespoons red wine vinegar
- 1/3 cup of olive oil
You will also need:
- 1 bag Yellow Corn Tortilla Chips
- 1 bag Blue Corn Tortilla Chips
- 2 cups mozzarella cheese
- 2 oz queso blanco
- 1 jalapeno sliced
- 1/2 avocado, cubed
Instructions
- Preheat a skillet over medium heat.
- Cut chicken and pork into bite sized pieces.
- Place the meat in a bowl and toss together with the olive oil, salt, garlic, cumin, and paprika.
- Add mixture to warm skillet.
- Cook chicken and pork for 8-10 minutes or until no longer pink.
- Remove the chicken and pork from the skillet and set aside.
- Combine all the ingredients for the chimichurri in a food processor.
- Process until well blended. Add more olive oil if the mixture is too thick.
- Place yellow and blue tortilla chips on an ovenproof pan or skillet.
- Top the chips with pork, chicken, mozzarella and queso Blanco.
- Place nachos under a broiler that has been preheated to low.
- Heat for 3-5 minutes; or until cheese has melted and bubbly.

- Drizzle chimichurri over the nachos.
