This cheeseburger pot pie is the perfect meal for busy families like my own. With the start of school comes chaos which will be a stark and difficult contrast to the laid back life we’ve been living. That chaos will no doubt take a toll on all of us. My mom recently told me that I looked old. My reply was simple; of course, I look old, I am a tired, mom-taxi to three kids.
I have a love hate relationship with the whole busy schedule thing. I love that our kids are active, that they have hobbies, interests, friends, and teammates. They are learning life skills in their individual and team sports that will help them as they grow older. I am also keenly aware that over-scheduling and placing too many demands on kids and their time can be detrimental to their development not to mention how it can disrupt family life. So how do we find the balance?

I don’t have that answer. I do, however, have an answer on how to get dinner on the table. This cheeseburger pot pie is so easy and is perfect for those lucky nights when the whole family makes it to the dinner table. Kids love cheeseburgers and that flavor is replicated in this easy pot pie. I use lean ground beef in this recipe. Lean beef is an important part of a healthy diet for kids. Research shows that including lean beef daily as part of a healthy diet can help lower cholesterol levels. For student athletes and active kids, there is no better choice than beef. The protein in beef helps build muscle and strong bodies.
A cheeseburger has to have ketchup, mustard, pickles, and cheese; so does this pot pie! Your kids will love biting down onto the seasoned biscuits that make a fun crust for this pot pie. Cheeseburger Pot Pie
Cheeseburger pot pie is a simple, home cooked comfort food that will both please and nourish your family!
Ingredients
- 1 teaspoon olive oil
- ½ cup frozen corn, carrot and celery mix
- 2 cloves minced garlic
- 1 lb lean ground beef
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon Worcestershire sauce
- 3 tablespoons ketchup
- 2 teaspoons yellow mustard
- 2 cups beef broth
- ¾ cup chopped pickles
- 1 cup shredded cheddar
- 1 can jumbo biscuits
- 1 teaspoon dried garlic
- 1 teaspoon dried onion
- 1/4 cup grated Parmesan cheese
Instructions
Preheat oven to 400 degrees. Grease a 9 x 13 inch baking dish and set aside.
Heat the olive oil in a large skillet over medium heat. Add frozen vegetables and heat until they begin to soften. Stir in garlic; cook for 1 minute. Add ground beef to the pan and cook until crumbled and no longer pink. Season beef mixture with salt and pepper. Stir in Worcestershire sauce, ketchup and mustard. Add beef broth and bring beef to a boil. Allow mixture to cook on medium hight heat until it begins to thicken. This should take about 10 minutes. Stir in pickles.
Pour beef into the prepared baking dish. Sprinkle cheese over the beef.
Quarter the biscuits and toss them with the dried onion, garlic and Parmesan cheese. Arrange biscuits over the cheese and beef mixture and bake for 15-20 minutes or until biscuits are golden.
