I am a genuine snacker. It is my favorite way to eat! But when I talk about snacking, I’m not necessarily talking about snacking on artichoke dip (although I do love that) or pretzel bites (although I love those too), I’m talking about the mini meals I have throughout the day.
My snacks (or mini meals) vary depending on my mood or my activity. Sometimes I am an apple and almond butter girls, sometimes I am all about nuts, sometimes it’s veggies and hummus and sometimes I want avocado, chicken or black bean salsa.

Ingredients
- 4 Lundberg Family Farm Rice Cakes (Wild Rice)
- 3 oz jarred pesto
- 1/2 halved cherry tomatoes
- 2 oz sliced fresh mozzarella
- 1 tablespoon chopped basil
- 1 tablespoon pine nuts
Instructions
Divide pesto and spread it over the rice cakes. Top each rice cake with tomatoes, cheese, basil and pine nuts.
