I had a reader ask if I could find some handheld recipe ideas; recipes that can be consumed while playing games and watching movies with our families. I thought that was such a great idea!
While we are spending a lot of time at home with family, recipes can bring us together. Unfortunately, we may not have an abundance of ingredients available to us.
I’m trying to share some easy recipe ideas that are made with standard ingredients and provide you with substitutions for each recipe.
The best way to combat the “what’s for dinner” these days is to try to keep a few key frozen items on hand. Meatballs are one of the best things to have in your freezer.
Meatballs can be used in so many ways ( Easy Vegetable Soup with Meatballs, Meatball Pizza, and Meatball Kabobs or just a few examples) These Buffalo Ranch Meatball Subs are another great options!
What Do I Need For These Meatball Subs
- 1 package frozen cooked meatballs
- 1 12 oz bottle Buffalo wing sauce
- 1 tablespoon ranch seasoning
- 1/2 cup ranch dressing
- 2 cups shredded iceberg lettuce
- 4 oz crumbled blue cheese
- 8 -10 sub rolls
- 1 teaspoon celery salt
How Do I Make Buffalo Ranch Meatball Subs
In a crockpot combine, meatballs, sauce, and seasoning; stir to coat.
Cook according to package directions. To assemble, drizzle a tablespoon of ranch dressing on the inside of each sub roll.
Place 1/4 cup of lettuce over the dressing, followed by the Meatballs.
Top each sandwich with crumbled blue cheese and a sprinkling of celery salt
Recipe Tips and Substitutions
I used frozen turkey meatballs, but you can use any meatball you prefer or any meatball that is available to you.
Use your favorite wings sauce, I used a store brand.
If you don’t want to use sub rolls, taco shells, lettuce wraps, pita bread, flatbread or in a pinch, hot dog buns can be used instead.
Blue cheese is not for everyone, feta, shredded jack, or cheddar cheese can be used.
I used a crockpot to cook the meatballs in the sauce, but they can easily be made on the stovetop or cooked in the oven then tossed with the buffalo ranch sauce.
