This tator tot casserole reminds me of elementary school. No, we did not have casserole in our school lunches, but there are certain foods that conjur up memories of the lunch line, the lunch ladies and our pale blue school cafeteria. Foods like fish sticks, Scooter Crunches, Nutter Butters, tostada pizza, Jello cups and tator tots can instantly bring me back to elementary school.
I was a packer during most of my time at elementary school. My mom would fill my Dukes of Hazzard lunch box with a salami sandwich, an apple and if I was lucky, a snack of chips or cookies. When I moved up in grades, I traded by lunch box for brown bags, but the contents remained the same. Eventually, even my mom was just as tired of my lunch as I was because I went from a packer to a buyer just like that.
I loved pizza days and when pizza was served with tator tots and a cookie, well then I was in heaven. The tator tots weren’t particularly crispy and the pizza was rather greasy, but it was like restuarant food to me. My family NEVER dined out, so getting to eat the cafeteria food was a HUGE deal.
Unlike my school lunches, the tator tots in this casserole are quite crispy, which is how I like them. This recipe is so easy, you’ll laugh. I start with a mix of frozen vegetables (Kroger has a bag of celery, onion and peppers that are great as meal starters) and garlic. I thinken these with flour and season them with dried herbs. Buffalo sauce is stirred in and shredded rotisserie chicken is added next. Two kinds of cheeses and a bag of tator tots complete the dish. Bake the tator tot casserole until the tots are crispy. Top the dish with crumbled blue cheese if desired.
This dish ranks right up there with my other Buffalo favorites; like Buffalo Chicken Soup, Buffalo Cobbler, Buffalo Chicken Fettucine Alfredo, Buffalo Chicken Zucchini Boats, and Buffalo Chicken Cups. Buffalo lovers, this is one recipe you have to try!
Buffalo Chicken Tator Tot Casserole

Ingredients
- 1 teaspoon olive oil
- ½ cup frozen onion, peppers, celery
- 2 cloves minced garlic
- ½ teaspoon dried thyme
- 1 teaspoon oregano
- ¼ teaspoon paprika
- ¼ teaspoon white pepper
- 1 tablespoon flour
- 1 cup chicken broth
- 1 ¼ cup Buffalo sauce
- 2 cups shredded rotisserie chicken
- 1 cup shredded cheddar
- 1 cup shredded jack cheese
- 2 lbs frozen tator tots
Instructions
Preheat the oven to 425 degrees. In a large skillet, heat oil over medium heat. Add frozen vegetables to the pan along with garlic; stir until they begin to soften. Add thyme, oregano, paprika, and white pepper. Sprinkle flour over vegetables; stir.
Slowly whisk chicken broth into vegetable mixture and stir until blended. Allow mixture to come to slight boil, stir. Continue to cook until mixture thickens. Stir in Buffalo sauce. Add shredded chicken to the pan, stir.
Arrange both cheeses over chicken mixture. Top the cheese with the frozen tots, arrrange them in a single layer as much as possible. Place the tots in the oven and bake for roughtly 28-32 minutes or until the tator tots are crispy. Remove and top with crumbled blue cheese. Serve immediately.
