I have always wanted to go blueberry picking. But I can never figure out when the blueberry season begins and I always seem to miss the selected blueberry picking days.
If I do happen to find out which days are open for picking, I know that the early bird gets the worm and I guess I a just not motivated enough to get up and fight off the other eager blueberry lovers.
Therefore I never make it out to get fresh blueberries.
I will say that of all the fruit pies, I think blueberry pies are my FAVORITE! Blueberries really lend themselves nicely to baking, the heat really brings out their sweetness.

How Do I Make Blueberry Oatmeal Bars?
With this recipe, it is best to make your filling first so that it has time to cool.
In a saucepan, stir together fresh blueberries, water, sugar, lemon juice, and cornstarch. Bring the mixture to a boil and then allow it to simmer on medium heat until it has thickened. This should take about 10 minutes. Remove the blueberries from heat and set aside,
For the oat topping, in a bowl, combine brown sugar, all-purpose flour, baking soda, salt, rolled oats, and softened butter. Work the butter into the mixture until the oats crumble.
Press half of the oat mixture into a greased 9 x 13-inch baking pan. Carefully place the reserved blueberry mixture on top of the oats in the baking dish. Sprinkle the remaining oat mixture over the blueberries,
Bake the oat bars for 35-40 minutes or until the oats are golden and toasted and the blueberries are bubbly.
Allow the bars to cool slightly before serving.
How Do I Store Blueberry Oatmeal Bars?
If you have leftover bars, keep the cooled bars covered. Covered bars will last 3-4 days if left on the counter.
Can You Freeze These Oatmeal Bars?
You can freeze these bars once they have cooled completely. Make sure you securely cover your pan before freezing these bars. These bars will last for 1 month in the freezer.
Can I Use Frozen Blueberries?
Yes! You can use frozen berries in place of fresh! You can even use a frozen berry mix if or other frozen fruit if you prefer.
