Macaroni Soup Is Comfort Food
This beer cheese and macaroni soup does not necessarily fit in with our typical new year’s resolutions, but I decided this year just isn’t going to be typical. Normally, on January 1st, I tell myself that this year I am going to be better. I’m going to be a better mom, friend, daughter, sister, wife, blogger, volunteer, and all the other roles of my life.
The problem is, to simply declare “I want to be better” as a resolution is a total cop out. No one ever says “this year I’d like to be worse”, right? No one ever wants to be worse. We all have areas where we want to improve, flaws we want to change and habits we want to break.
This year I have a new resolution and it is to focus. Focusing on my kids when they speak will move me closer to being a better mom. Focusing on ways to encourage my husband will help me become a better wife, focusing on being there for my friends makes me a better friend, focusing on what tasks that need to be done today can help my blog tomorrow. Focusing on the here and now will get me closer to being that better version of myself. At least that is what I hope will happen as we head into 2018.
This One Rich Tasting Macaroni Soup

This soup is a spin on my favorite beer cheese. It is made with two kinds of cheddar, yellow and white along with pilsner beer give this soup a robust flavor and creamy texture. I also add elbow macaroni which helps make it a little more popular with the younger crowd. Beer Cheese and Macaroni Soup
This velvety smooth and creamy macaroni soup is pure comfort food! Vegetables, two kinds of cheese, beer and macaroni come together in this easy and delicious soup!
Ingredients
- 4 slices of bacon
- ½ cup diced onion
- 1 cup frozen peas and corn
- ¼ cup flour
- 1 32 oz container vegetable broth
- 1 cup half and half
- 1 12 oz can pilsner beer
- 1 ½ cup dried macaroni
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 ½ cups shredded cheddar cheese
- 1 cup shredded white cheddar cheese (I used Cabot Cheese)
Instructions
Place bacon in a stock pot over medium heat and cook until crumbled, remove and set aside. Add onion to bacon grease and cook for 3-4 minutes or until soft. Add frozen vegetables; stir. Sprinkle flour over vegetables and slowly whisk in the vegetable broth whisking until combined. Continue to whisk and add half and stir until smooth. Stir in the beer and the macaroni. Cook until macaroni is al dente. Season soup with salt and pepper. Add shredded cheddar and whisk mixture until cheese has melted and soup is smooth and creamy. Serve with crumbled bacon and croutons if desired
Notes
About the beer: you can probably use what you have at home, although brown ales, stouts and IPA's might be a bit too strong

This Recipe Sounds Amazing And I Really Want To Make It For My Husband This Weedend While He Is Home How Ever I Am Not Sure About What Beer Use We Live In The Middle Of No Where Oklahoma So Our Beer Choices Can Be Limited Could I Use Something Like Coors Light Or One Along Those Lines?
