I’ve mentioned in previous posts that my family was rarely treated to sweets when I was growing up. A good part of this had to do with the fact that my mom was thrifty. She’d refuse to spend any extra money on cookies when her food budget was already tight. Another factor that came into it was my mom insisted that her homemade desserts were way better than anything you could buy in a store.
I remember going to get ice cream with a friend and her family. Honestly, I didn’t know how to behave. Do I order what I want or do I stick with the cheapest thing on the menu? Because I know what I wanted, I wanted a banana split!
Banana splits were like the Cadillac of sundaes. Bananas sliced open and stuffed with vanilla, chocolate, and strawberry ice creams and topped with pineapple, chocolate and strawberry sauces was a dream to an indecisive dessert lover such as myself.
I remember trying to recreate this treat at home with my sisters; who were equally deprived of all things sweet. The only thing that made our homemade banana splits authentic was the bananas, but hey we were still completely content.
This banana bread is a tribute to my upbringing because mom’s homemade food was the best and this is also a tribute to my sundae loving youth. This banana bread is loaded with all the banana split essentials. It has bananas (of course), crushed pineapple, chocolate chips, maraschino cherries and for crunch, almonds. This banana bread is loaded, it is almost like dessert. However, it is a quick recipe that will always yield great results and lots of smiles! Want more banana recipes? Banana Split Banana Bread
Banana Split Banana Bread - This incredibly moist banana holds everything you'd want in a banana split! In each slice, you'll find bananas, pineapple, cherries, chocolate, and almonds!
Ingredients
- ½ cup softened butter
- ¼ cup sugar
- ½ cup brown sugar
- 2 eggs
- 2 cups mashed bananas (I used 3 small bananas)
- 1 8 oz can crushed pineapple drained
- 6 oz chopped and drained maraschino cherries
- 2 cups flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ⅓ cup chopped almonds
- ½ cup chocolate chips
Instructions
Preheat the oven to 350 degrees. Spray a 9 x 5 inch pan with non-stick spray and set aside.
In the bowl of a stand mixer, combine softened butter and both sugars and beat until creamy. Add eggs one at a time to the butter until incorporated. Add bananas, pineapple and cherries.
In a bowl, combine flour, baking powder and salt. Slowly mix dry ingredients into wet ingredients and mix until blended. Stir in almonds and chocolate chips and pour batter into prepared pan.
Bake bread for 60-65 minutes or until a toothpick inserted comes out clean.
