This ginger coffee cake recipe is perfect for the holidays. There’s something about that spicy ginger and sweet maple syrup flavor that is comforting and warm and fabulous for the winter season. This glazed maple streusel coffee cake is sure to hit the spot and have you feeling warm and fuzzy even on the coldest of mornings.
Gingerbread Coffee Cake
This recipe is modified from one that I found on the Fleischmann’s Bread World website. I put my own twist on this recipe. The original coffee cake was simply made with a cinnamon streusel and a vanilla glaze. I decided to add ginger to the streusel mixture and maple syrup to the glaze to make this more of a holiday coffee cake.
While this coffee cake does take a bit of time to prepare, you can easily make it the night before you plan on serving it.
Ingredients
For the cake, you will need:
- All-purpose flour
- Fleischmann’s® RapidRise Yeast
- Granulated sugar
- Salt
- Water
- Mazola® Corn Oil
- Egg
- Spice Islands® Pure Vanilla Extract
For the streusel topping, you will need:
- All-purpose flour
- Granulated sugar
- Brown sugar
- Spice Islands® Ground Saigon Cinnamon
- Ground ginger
- Butter
For the frosting
- Powdered sugar
- Milk
- Real maple syrup

How to Make Maple Ginger Coffee Cake
- In a large bowl, combine 1 cup of flour with the dry yeast, sugar, and salt, stirring until blended.
- Combine the water and oil in a microwave-safe bowl. Heat in the microwave in 15-second intervals until warm but not hot.
- Add to the flour mixture along with the egg and vanilla.
- Beat the mixture together on medium speed for 2 minutes making sure to scrape the sides of the bowl as necessary.
- Add in the remaining 1 cup of flour. Beat until blended.
- Use a spatula the spread the dough into a greased 8×8 baking dish. The dough may not fill the corners perfectly.
- Cover the pan with a towel and allow the dough to rise in a warm place until doubled in size. This could take about 30-45 minutes.
- Meanwhile, in a small bowl, combine the flour, sugar, brown sugar, cinnamon, and ginger.
- Cut in the butter with two forks until the mixture becomes crumbly but the butter is still visible.
- Sprinkle the streusel over the top of the cake and then bake in your preheated 350 degrees F oven for 35-45 minutes or until golden brown.
- Cool on a wire rack.
How to Make Maple Glaze
- For the glaze, whisk together the powdered sugar, milk, and maple syrup until the frosting is a drizzling consistency.
- Drizzle over the top of the cake.

How to make ginger coffee cake the night before
Prepare the dough and streusel and place them into the pan as directed. Cover the top with plastic wrap and put it into the fridge for up to 8 hours. In the morning, place the pan on the counter for about 30 minutes as you preheat the oven. Bake as directed.
Why is it called coffee cake?
Coffee cake does not contain coffee cake but it does usually get served with coffee, which is where the name originates. Unlike a frosted cake these are usually made to be enjoyed shortly after coming out of the oven so that they are still tender and warm. Perfect for enjoying with your cup of joe!
Is there a difference between coffee cake and crumb cake?
The two cakes are incredibly similar in appearances and ingredients but the biggest difference would have to be in the streusel on top. A coffee ake is known for having less streusel and more cake whereas a crumb cake has a thicker streusel and more streusel to cake ratio.

Maple Ginger Coffee Cake
This coffee cake is simple and easy. The ginger streusel and the maple glaze makes this coffee cake outstanding!
Ingredients
For the cake
- 2 cups all-purpose flour
- 1 packet Fleischmann's® RapidRise Yeast
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 3/4 cup water
- 2 tablespoons Mazola® Corn Oil
- 1 egg
- 1 teaspoon Spice Islands® Pure Vanilla Extract
For the streusel topping
- 1/3 cup all-purpose flour
- 1/3 cup sugar
- 1/3 cup brown sugar
- 1 teaspoon Spice Islands® Ground Saigon Cinnamon
- 1 teaspoon ground ginger
- 1/4 cup butter OR margarine
For the frosting
- 1 cup powdered sugar
- 2 tablespoons milk
- 1-2 tablespoons real maple syrup
Instructions

- Meanwhile, in a small bowl, combine flour, sugar, brown sugar, cinnamon and ginger. Cut in butter with two forks until mixture becomes crumbly, but butter is still a bit visible.
