One of my favorite things to do with eggs makes a quiche. I love quiche, I think they are not only easy but versatile and fits any meal on any occasion.
I used to think quiches were complicated to make, but nothing could be farther from the truth! While this recipe would be great for Easter breakfast, it really is just as good for your dinner tomorrow night!
What Is A Quiche?
A quiche is a baked egg pie that is baked in a pie crust, although sometimes it can be served crustless.
You can add all sorts of cheeses, veggies, and meats to your quiche. Doing that makes them more filling and more like a meal.
What Do I Need For This Easy Quiche Recipe?
- Unbaked pie crust
- Asparagus
- Flour
- Pancetta1
- Gruyere cheese
- Italian blend cheese
- Eggs
- Half and half
- Salt
- Dried basil
- Dried Thyme
How Do I Make This Quiche Recipe?
- Preheat oven to 425. Unroll piecrust over a 9 in pie plate. Bake crust for 5-6 minutes, remove and set aside. Reduce oven to 325.
- Cook asparagus in a small amount of water, until bright green and tender, about 6 minutes. Drain. Cut asparagus into ½ inches pieces, mix with flour and set aside.
- Cook pancetta in a small skillet until cooked. Drain on a paper towel.
- Arrange asparagus over crust. Top with cheeses. In a small bowl, whisk together eggs, half and half, salt, basil, and thyme.
- Pour egg mixture over cheese. Sprinkle quiche with pancetta.
- Bake quiche for 25 minutes or until middle is firm and toothpick inserted comes out clean. Let the quiche sit at least 10 minutes before slicing.
Which Cheese Is Best For Quiche?
Quiche commands a good, melty cheese. This is why you will often find Swiss cheese or in this case, Gruyere because they melt smoothly.
The Italian blend cheese in this recipe is made with provolone and mozzarella which are also a great cheese for melting.
Can I Freeze Quiche?
Quiche is one of my favorite things to freeze! Once your quiche has cooled completely, wrap it in plastic wrap and then aluminum foil and place it in the freezer.
A quiche can be kept in the freezer for 2-3 months. When needed, preheat your oven to 350 degrees. Place the quiche in the oven and bake for 30-35 minutes. The quiche’s internal temperature should reach 160 degrees. Allow the quiche to rest before serving.
A quiche will last 3-4 days in the refrigerator.
Why Is My Quiche Watery?
Sometimes this has to do with the moisture released from the veggies. Make sure your veggies have been dried completely or else they will release water during the baking process.
Quiche Tips and Substitutions
I used a store-bought pie shell for this recipe, but if you have a homemade pie crust you like, then you can use that instead.
Puff pastry can also be used as a pie crust.
If you do not like asparagus, try using broccoli instead. Or try this caramelized onions and spinach quiche instead.
Cheddar cheese can be added to your cheese blend, as well as feta or goat cheese.
What Can I Serve With Quiche?
Try serving your quiche with this Brown Sugar Baked Ham, Balsamic Chicken, a Kale Salad or just on its own with fruit on the side!

- 1 lb asparagus, trimmed
- 1 tablespoon all-purpose flour
- 3 oz pancetta, chopped
- 1 cup Gruyere cheese
- 1 cup Italian blend cheese
- 3 eggs, beaten
- 1 cup half and half
- 1/2 teaspoon salt
- 3/4 teaspoon basil
- 1/2 teaspoon thyme

I love your storytelling… your blog is one of the few that I actually READ and don’t just come for the recipes. Oh to be a kid again!!! I remember one time I was mad at my mom and threatened to run away… I got a huge garbage bag and loaded it up with all of my VHS tapes of my fave shows and movies.
