Soft pretzel bites with buttery Parmesan topping are as easy to make as they are to eat!
Served with zesty marinara dipping sauce.
I’ve been making these over and over again because they are soooo good! These parmesan pretzel bites are soft, pillowy, and buttery!
This garlic parmesan pretzels recipe is so easy to make too! The best part is you don’t have to let the dough rise, you don’t have to knead the dough and you don’t have to do any rolling either as this recipe relies on store-bought pizza dough instead! So we get all of the deliciousness without the long wait times, effort, or mess. Doesn’t that just sound perfect?
What Are Pretzel Bites?
Pretzel bites are small pieces of pretzel flavored dough that has been cut into bite-sized pieces. The dough is first boiled in baking soda filled water until it is partially cooked then it is baked until puffed and golden brown. The baking soda water is what gives them their traditional chewy texture and flavor that soft pretzels are known for, so these taste like big soft pretzels, only these are small and poppable.
Ingredients
- Pizza Dough – I have my favorite brand, but you can use any frozen (and thawed) brand of dough you like!
- Water
- Baking Soda
- Egg
- Butter
- Garlic Powder – You can also use garlic salt, however, I find it easier to use salt separately to control the flavor and sodium.
- Grated Parmesan
- Marinara Sauce – This is your dipping sauce. I used this homemade marinara sauce recipe.
For the exact measurements, please see the recipe card below.
You will also need:
- Heavy Stockpot
- Mesh Skimmer – To remove your dough from the water
- Baking Sheet
- Parchment Paper
These tools and equipment will help to make the process run more smoothly.
How To Make Pretzel Bites With Pizza Dough
- Preheat your oven to 450 degrees F.
- Fill a pot with water and bring it to a boil. When the water begins to boil, add in the baking soda, the water will begin to bubble up.
- Use a dough scraper or a pizza cutter to cut your dough into 1-inch sized portions and roll each one into a ball.
- Drop the dough about 4 to 6 pieces at a time into the water.
- Cook until the dough becomes a little firmer and rises to the top. This should take about 2 minutes.
- Use a slotted spoon or a skimmer to remove the pretzels from the hot water and then drain them on a parchment paper-lined baking sheet.
- Repeat with the remaining dough.
- Brush the tops of your pretzels with the beaten egg.
- Bake in the oven for 12 minutes or until golden brown.
- Remove the pretzels from the oven and toss in a large bowl with melted butter. Sprinkle with garlic powder, Italian seasoning, and parmesan cheese.
- Serve pretzels with marinara sauce.
- Enjoy!

Looks delicious! Should these be served the same day they are made, or would they still be soft by the next day?

They are best the same day they are made, but certainly awfully tasty the next day!

Soft pretzels are one of my favorite things – I love this variation!
Sarah says
Just wondering…..can these pretzels be boiled, then refrigerated for a few hours and then finish cooking in the oven when you are ready to serve? Would like to make these when company comes over but want to reduce the time I spend in the kitchen when they are here. Thanks
Lemonsforlulu says
I think the pretzels might dry out in the fridge. I would go ahead and make them in advance then right before your company comes toss them in a little butter and heat them on the stove top.
Tim says
I wanted to make these pretzels, but I was wondering how much yeast to use. It says use a packet of yeast, but how much is in the packet, are you using the .31oz packets? I currently just have a 4oz bottle of yeast. Can’t wait to try these!
Lemonsforlulu says
I used one single 1/4 oz packet of Red Star Yeast.

Jade says
I made this and they are absolutely disgusting but they look delicious! I did everything correctly. I am not sure what went wrong. But boy are they nasty!
Lemonsforlulu says
I’m sorry to hear that Jade. I make this recipe all the time and have never had a “nasty” outcome. Taste is somewhat subjective however. Can you tell me what exactly was nasty about it so I can troubleshoot?
Dawn says
Can these be made mixing by hand? I don’t have a stand mixer or mixer with dough hook. Would like to try these though
Lemonsforlulu says
Sure! The mixer only provides ease and speed. Mixing by hand will only take more time.
