What Are Red Velvet Brownie Cookies?
These cookies are made from a modified brownie recipe to give you luxuriously rich and chewy cookies but with a beautiful red hue. Made from scratch and with just a few ingredients and steps, these cookies really are perfect. The little wait time needed for the dough to chill helps the cookies to maintain shape as they bake and also helps the red color to deepen. As hard as it is to be patient for an hour, I really do recommend it for the best results.
Ingredients
- Softened butter
- Brown sugar
- Eggs
- Vanilla extract
- Distilled white vinegar
- Red food coloring
- All-purpose flour
- Unsweetened cocoa powder
- Baking soda
- Salt
- Semi-sweet chocolate chips

How to Make Red Velvet Brownie Cookies
- Combine the butter and sugar in a mixer until creamy.
- Beat in the eggs, one at a time.
- Add in the vanilla extract, vinegar, and red food coloring.
- In another bowl combine the flour, cocoa powder, baking soda, and salt.
- With your mixer on low speed, carefully add the flour mixture to the egg mixture until combined.
- Fold in the chocolate chips.
- Place the dough in the fridge to chill for at least 1 hour.
- Preheat your oven to 375 degrees F.
- Use a small cookie scoop to roll out the dough into 1 1/2 inch-sized balls and then place them on a baking sheet.
- Bake in the oven for 7-9 minutes.
- Let the cookies cool don’t the sheet for 2 minutes before removing and placing on a wire rack to cool completely.

- Today, the red in red velvet largely comes strictly from food coloring or even from beets.
- Originally, the change in color had to do with cocoa powder that was used when this type of cake originated. The cocoa powder contained a certain compound that contained a pH indicator; that when combined with acids like vinegar or buttermilk (key ingredients in most red velvet recipes).
- Baking soda would also react with the above-mentioned acids and give red velvet cakes a fluffy consistency.

These cookies will last about 5 days if kept stored in an airtight container at room temperature. You could also keep them in an airtight container in the fridge for up to a week but it may result in the cookies becoming dried out faster as the cold air usually removed moisture from baked goods.
Can I freeze brownie cookies?
Yes, these cookies can be kept stored in an airtight container in the freezer for up to three months. When ready to eat, simply place the cookie don’t the counter and allow it to come up to room temp. Depending on how many cookies you set out, it may not take longer than a few minutes per cookie.
Can I use white chocolate chips?
Absolutely! these cookies would still taste incredible if served with some white chocolate chips in place of the semi-sweet ones. The added white spots may even make the cookies look a bit more festive or seasonal. Perfect if you’re trying to serve these up for the holidays. I recommend using Ghiradelli brand white chocolate as it’s higher quality and will bake up much more nicely than the cheaper quality ones.

- 1 Tablespoon red food coloring

Instructions
