How To Make Mocha Chocolate Chunk Cookies
This recipe starts by combining flour, espresso granules, and cocoa powder. My favorite cocoa powder to use is Rodelle Organic Cocoa Powder. I love the soft texture, the rich color and the deep flavor of that particular cocoa powder. But that brand is not vital to the success of this recipe.
Butter and sugar are combined until creamy and smooth and then eggs and vanilla are added next. The cocoa mixture gets mixed in next followed by chocolate chunks or jumbo chocolate chips.
The cookies will only take about 10 minutes to bake, but they will need to cool on a cooling rack before they can be frosted.
The Mocha Frosting Is Dessert All On Its Own!
The frosting is lusciously creamy, I for one, could eat it all by itself! For the frosting, I whisk together cocoa powder, brewed coffee, melted butter, and vanilla. I add enough powdered sugar until I get a spreadable consistency. You can omit the coffee if you find the flavor too strong, hot water will work just fine.

The cookies look yummy!
Your story reminds me of my own gift card crazy purchase. I had taken the kids shopping for necessities — something about growing means they get new wardrobes just about quarterly! Anyway, I had a gift card and had purchased nothing for myself. So, I went to “mommy’s store.” Nothing really struck me, but I just didn’t want to go home empty-handed. Sigh. I bought a top I would never have spent so much of my own money on… and while I like it, I wonder what I might have found that I LOVE if only I had waited.
You may file my comment under “Misery Loves Company.” 🙂

Can I make these using salted butter and eliminating the salt called for in the recipe?
Lemonsforlulu says
You could, you definitely have more control of the salt when you use the unsalted butter and add it into the recipe. If you do try it, I would love to hear how it turns out!

I bake all summer long for the tanker base, here in Redding, calif. they get extremely busy during the summer so cookies is their favorite quick treat. They can grab and go, only with the frosting on these makes it a little difficult but they also have morning time with coffee. So they’ll be perfect for that. Can’t wait to try these. I love trying different cookie recipes all summer long. Thank you for sharing. ❤️

Thank you Sharon! I hope you love them, they are so rich and chocolatey!
Alice says
I must be missing something. Your recipe says to mix the first 4 ingred. tog. for the frosting. That’s flour, espresso powder, cocoa, and baking soda. How does this make a frosting?
Alice says
Nevermind, I found my mistake! Found the ingredients for the frosting for the Chocolate Chunk mocha cookies!
Tanya Schroeder says
Oh good! Thanks for letting me know!
