I think I’m going to drown my sorrows in Butterfinger bars this week. Actually Butterfinger Bark to be exact. I love Butterfinger candy bars. I take them all out of my kids Halloween stash while they are sleeping. I usually buy a bag just for me. I love the combination of sweet chocolate and that peanut butter crunch inside.
The reason for my sorrow is we just got back from vacation and it already feels like we never left. Except for the fact that I have a very dirty car, mounds of laundry and an empty fridge. Tonight will be the first night in 9 days that I actually have to cook. It’s been such a nice break. It’s not really that I need a break from cooking, it’s the complaining that goes on during our meals (usually me, because my kids aren’t eating) that makes me tired. Then, of course, there are all dishes afterwards.
We went to the beach this year. It was wonderful, I loved every minute of it!! Going back next year for sure!!! During our vacation to South Carolina, we took a little detour to Savannah, Georgia for the day. That is one adorable little town! We all enjoyed walking around the city, taking in the charming old southern houses. They have a wonderful street on the river…ironically named River Street. It faces the Savannah River. It’s quite eclectic. Fun shops and restaurants. You can take a free ferry-boat back and forth over the river. Savannah has a deep, rich history, I’d love to go back. I’d love to eat more food there, is what I really want to do. As we strolled down the street, we were stopped in our tracks by the River Street Sweets. What caught our attention was an old machine spinning quickly to wrap salt water taffy. Behind the machine, two men were unwrapping other taffy to cover large, round, green apples. Our eyes were as big as saucers at that point. Naturally we were drawn inside. In the shop were all kinds of home-made chocolates, of course there was salt water taffy, chocolate covered marshmallows, PRALINES, suckers, rock candy, fudge, truffles and anything else you could think of to give you the ultimate sugar rush! What caught my breath was the chocolate bark. Specifically the Butterfinger bark. A thick, square slab of chocolate coated in chopped Butterfinger candy bars and drizzled with white chocolate sat their teasing me with its deliciousness. All my favorite tastes right there for the taking. Be still my heart! I think I gained 5 lbs just looking at it!
I knew I had to recreate that Butterfinger chocolate bark candy as soon as we got home! I decided to go a little thinner, I guess so I could eat more at one sitting. And I added a special ingredient: peanut butter. The peanut butter made it taste extra rich and thick. It’s like a cross between a Resee Cup and Butterfinger bar! Crazy, I know! It was a wonderful blend of chocolates, the peanut butter is hardly noticed. It just gives a deeper taste to the candy. Top it off with the crunch from the Butterfinger chocolates for pure decadence. I feel it would do River Street Sweets proud! Everyone loved this chocolate bark candy recipe!
Funny, I was motivated to make chocolate, but laundry? Dinner? Well, perhaps I can be on vacation for one more day.
Chocolate Bark: Easy to make and easy to eat!
Butterfinger Bark
Smooth chocolate with crunchy Butterfinger candies pressed in. Top it off with a drizzle of white chocolate.
Ingredients
- 12 (. 65) Butterfinger chocolate bars, chopped
- 12 oz semisweet chocolate
- 1/3 cup creamy peanut butter
- 12 oz white chocolate
Instructions
- Melt semi sweet chocolate in microwave in 1-minute intervals stirring after each minute. When completely melted, stir in peanut butter and spread onto a wax paper lined baking sheet. Melt white chocolate in the same way. Pour over chocolate layer and using an off set spatula or a spoon swirl chocolates together. Cover with chopped Butterfinger bars, press candy into chocolate if necessary. Place in refrigerator for 1 hour. Store in an airtight container.

Can’t wait to try this. I’m a Butter Finger Lover too! I think the recipe is missing the unit of measure for the peanut butter. I’m assuming it’s 1/3 cup peanut butter.
