I like being outdoors, but I am not the outdoorsy type. I admit I am sort of a baby when it comes to the great outdoors. I’ve made a list of my likes and dislikes when it comes to the great wide open.
I like playing outside with my kids.
I like walking my dog.
I like parks.
I like being at the pool.
I don’t like long nature trail hikes.
I don’t like ticks.
I don’t like camping (because I LOVE indoor plumbing)
I don’t like fishing.
I don’t like swimming places where I cannot see the bottom.
What can I say? I am truly a dandy. But I recognize that I don’t want my kids to be the same way. So when my kids had the opportunity to go fishing (without me) last weekend, I jumped at the chance! It’s important for kids to experience all life has to offer. My kids were so excited, they talked about going all day!! While I wasn’t there to witness their fishing prowess, I heard all about it when they came back! My son was bursting with enthusiasm as he recalled his experience. It went like this: “mom, mom, guess what? I caught some weeds, a chair, and two fish!”.
Clearly, he was just as excited about catching weeds and the boat chair as he was catching the fish! I’m happy someone was able to take them out to the lake to fish. My son can’t wait to go again. He even fashioned his own fishing pole out of tinker toys and thread! Perhaps I’m inspired enough to branch out and try a new family outdoor experience. I may actually take the kids camping….in the backyard! They get to “camp”, I get my bathroom, we all win.
About Shrimp Po Boy Recipe
In honor of our recent fishing experience, I made this shrimp po boy recipe. I love shrimp! I think it’s very versatile. I lightly seasoned my shrimp and sauteed them in a little olive oil. I dressed up these sandwiches with a super simple cilantro slaw which is made with bagged shredded lettuce and homemade cilantro pesto. The pesto is vibrant and so fresh, which balances the seasoning of the shrimp. This shrimp po boy recipe can be served with this Mixed Greens and Citrus Salad and this loaded vegetable pasta salad for an easy summertime meal!

Shrimp Po Boy with Cilantro Pesto Mayo
This shrimp po boy recipe is a classic southern sandwich made with a fresh tasting twist! While it may seem as though this sandwich is adventurous, it is so easy to put together!
Ingredients
Cilantro Pesto
- 3/4 cup fresh cilantro leaves
- 1/4 cup parsley leaves
- 2 garlic cloves, coarsely chopped
- 2 tablespoons pine nuts
- 1/4 cup grated Parmesan
- 1/2 cup olive oil
- Salt and freshly ground black pepper
- 2 cups bagged shredded lettuce
- 1 tablespoon olive oil
- 1lb uncooked shrimp, peeled and deveined.
- 1 teaspoon cumin
- 1 tsp paprika
- 4 kaiser rolls
- salt pepper
- tomato
- lettuce
- mayo
Instructions
- For the pesto: combine all ingredients in a food processor. Pulse until smooth. Combine the pesto and the shredded lettuce in a bowl, turning to coat. Heat oil in a large skillet. Season shrimp with paprika, cumin, salt, and pepper. Cook shrimp until no longer pink. To assemble: hallow out roll if necessary, spread mayo on tops and bottoms of each roll. Place lettuce and tomato on the bottom. Fill rolls with shrimp and slaw; serve.

Hubby just returned from Alaska with a cooler of fresh shrimp, halibut and salmon. This sandwich looks delicious–perfect timing.
I feel about the same way you do about the great outdoors! Luckily hubby is just the opposite so our 6 kids (now grown) have had plenty of outdoor experiences.
Now when the grandkids come to visit fishing with Grandpa Greg is always on their short ‘to do ‘ list!
